There is something mighty satisfying about a slow cooker supper that asks almost nothing of you and still comes out tasting like you fussed half the day. These sweet chili beef bites are the sort of sticky, savory-sweet dish that fits right into busy weeknights, game day tables, or those potluck gatherings where the crock gets scraped clean in a hurry. Bottled sweet chili sauce does the heavy lifting here, coating beef stew meat as it cooks down into tender little bites with plenty of glossy sauce for spooning over rice or scooping up with a toothpick.

Serve these beef bites over hot white rice, buttered egg noodles, or even creamy mashed potatoes if you want a heartier Midwestern plate. For a lighter spread, set them beside steamed broccoli, green beans, or a crisp cabbage slaw to balance the sweetness. They also make a fine party dish with sesame seeds and sliced green onions on top, plus little picks for easy serving.

Ingredients

2 pounds frozen raw beef stew chunks

1 1/2 cups bottled sticky sweet chili sauce
2 tablespoons low-sodium soy sauce
3 cloves garlic, minced
1 tablespoon grated fresh ginger
4 green onions, sliced, divided

Directions

1. Add the frozen beef stew chunks to the slow cooker. Pour the sweet chili sauce over the top, then add the soy sauce, minced garlic, grated ginger, and half of the sliced green onions.

2. Stir gently to coat the beef as evenly as you can. Cover and cook on LOW for 7 to 8 hours or on HIGH for 4 to 5 hours, until the beef is very tender and cooked through.

3. Remove the lid and stir well. If the sauce seems thin, let it cook uncovered on HIGH for 15 to 20 minutes to thicken slightly. Taste and adjust with a little more soy sauce if needed.

4. Spoon the beef bites onto a serving platter or over rice, then sprinkle with the remaining green onions. Serve hot with extra sauce from the slow cooker.

Variations & Tips

Make it spicy: If your family likes a little more kick, add a spoonful of sriracha or a pinch of red pepper flakes right in with the sauce. That little bit of heat plays nicely with the sweetness.

Add vegetables: Stir in broccoli florets, sliced bell peppers, or snap peas during the last 30 to 45 minutes of cooking so they stay bright and pleasant rather than turning too soft.

Use fresh beef if preferred: If your stew meat is thawed or fresh instead of frozen, the cooking time may be a bit shorter. Start checking for tenderness about an hour early so the beef stays succulent.

For a party platter: Serve the beef bites from the warm slow cooker with toothpicks, and set out rice on the side if you want to stretch the dish into a fuller meal. A sprinkle of sesame seeds makes it look extra nice without extra work.
