When I need a dinner that feels a little special but takes almost no mental energy after a long workday, this 5-ingredient oven baked sockeye salmon is one of my favorite shortcuts. Using frozen raw sockeye salmon chunks means there is no thawing, no marinating, and barely any prep, so you can simply add everything to one oven-safe casserole dish and let the oven do the work. The result is tender, flaky salmon with a rich, savory flavor that tastes much more impressive than the effort involved.

This salmon is great served over steamed rice, mashed potatoes, or buttered noodles to soak up the flavorful juices in the dish. For an easy balanced plate, add roasted broccoli, green beans, asparagus, or a simple salad on the side. If you want to keep things especially low-effort, warm a loaf of crusty bread and call dinner done.

Ingredients

1 1/2 pounds frozen raw sockeye salmon chunks

4 tablespoons melted butter
2 tablespoons lemon juice
3 cloves garlic, minced
1 teaspoon salt

Directions

1. Preheat your oven to 400 degrees Fahrenheit. Place the frozen raw sockeye salmon chunks in an even layer in an oven-safe casserole dish.

2. In a small bowl, stir together the melted butter, lemon juice, minced garlic, and salt. Pour the mixture evenly over the frozen salmon chunks.

3. Cover the dish loosely with foil and bake for 20 minutes. Remove the foil and continue baking for 8 to 12 minutes, or until the salmon is opaque and flakes easily with a fork.

4. Spoon some of the pan juices over the salmon before serving. Serve hot with your favorite side dishes.

Variations & Tips

Add black pepper: If you want one more layer of flavor, add a few grinds of black pepper before baking. It is a tiny change, but it gives the salmon a little extra warmth without making the recipe more complicated.

Use lemon slices: Tuck a few thin lemon slices around and over the salmon before it goes into the oven for a brighter, fresher finish. This also makes the casserole dish look a little prettier if you are serving it straight from the oven to the table.

Check doneness by size: Since frozen salmon chunks can vary, start checking a little early if your pieces are small. The salmon is ready when it turns opaque throughout and flakes easily, but you do not want to overbake it or it can dry out.

Make it a full meal: To keep dinner extra easy on busy nights, serve this over microwave rice or quick couscous and add a bag of steamed vegetables. It is the kind of low-stress meal that feels put together even when the day has been anything but.
