Every now and then, a kitchen experiment crosses the line from “unusual” into “absolutely not a safe preservation method,” and this one did it in spectacular fashion. If you want crisp pickled beans, the path is simple but specific. Start with very fresh beans, preferably picked the same day. Trim them, wash them well, and pack them tightly into clean jars. Use a brine that is thin enough to circulate, acidic enough to preserve, and seasoned enough to complement the vegetable rather than smother it.
