These 3-ingredient pepperoni Laramie bites are the kind of retro party snack that earns a permanent place in the family recipe box: simple, salty, cheesy, and easy to make in big batches for picnics, potlucks, game days, or holiday trays. They have that classic 1970s church-cookbook appeal, where convenience ingredients came together in a warm, crisp little bite that disappeared almost as soon as the platter hit the table.

Serve these bites warm with a bowl of marinara or pizza sauce for dipping if you like, and round out the spread with crunchy celery, a simple tossed salad, pickle spears, or a fruit tray to balance the richness. They also fit right in alongside other appetizer favorites like deviled eggs, cocktail meatballs, and snack mixes, and they pair especially well with iced tea, lemonade, or cold beer.

Ingredients

1 can refrigerated biscuit dough, 8-count

24 slices pepperoni
4 ounces mozzarella cheese, cut into 24 small cubes

Directions

1. Heat the oven to 375°F and line a baking sheet or small baking pan with foil or parchment for easy cleanup.

2. Separate the biscuit dough and cut each biscuit into 3 equal pieces so you have 24 portions. Flatten each piece slightly with your fingers.

3. Place 1 slice of pepperoni and 1 cube of mozzarella on each dough piece. Wrap the dough around the filling and pinch the edges closed to make small sealed balls.

4. Arrange the bites seam-side down on the prepared pan, leaving a little space between them. Bake for 12 to 15 minutes, or until puffed and golden brown and the cheese is melted.

5. Let the bites cool for 3 to 5 minutes before serving so the cheese sets slightly and does not burn mouths. Serve warm.

Variations & Tips

Use different cheese: Mozzarella gives you that classic pizza-style pull, but small cubes of provolone, Monterey Jack, or cheddar also work well. Just keep the cubes small so the dough seals easily and the cheese does not leak out too much.

Add a dipping sauce: Even though these are flavorful on their own, a warm bowl of marinara, pizza sauce, or ranch on the side makes them feel more party-ready and helps stretch the batch on an appetizer table.

Keep the dough cold: If the biscuit dough gets too warm, it can become sticky and harder to seal around the filling. Work with a few pieces at a time and keep the rest chilled until you are ready to shape them.

Make them crispier: For more color and crunch, bake the bites on a preheated metal sheet pan and give them an extra minute or two at the end, watching closely so the bottoms do not overbrown.

Try a mini pizza version: Add a very small dab of pizza sauce inside each bite with the pepperoni and cheese, but use it sparingly so the filling stays contained and the dough can still seal properly.
