When I need something easy that still feels cozy and a little special, these oven baked 4-ingredient beef stuffed shells are one of my favorite shortcuts. My older sister has been bringing a version of this to early autumn potlucks for years, and it always disappears fast because it tastes like you spent way more time on it than you actually did. With just a handful of grocery store staples, you get tender pasta, savory beef, creamy ricotta, and rich marinara baked together into a warm, crowd-pleasing dish that works beautifully as an appetizer or casual family dinner.

Serve these stuffed shells with a crisp green salad, garlic bread, or roasted vegetables if you want to turn them into a full meal. For potlucks or game-day spreads, I like setting them out with toothpicks or a small serving spoon alongside antipasto skewers, Caesar salad, or a simple platter of sliced fresh vegetables so the whole table feels hearty but low stress.

Ingredients

20 jumbo pasta shells

1 pound ground beef
1 1/2 cups ricotta cheese
1 jar (24 ounces) marinara sauce

Directions

1. Preheat your oven to 375°F. Bring a large pot of salted water to a boil and cook the jumbo pasta shells until just al dente according to the package directions. Drain and rinse briefly with cool water so they are easier to handle.

2. While the shells cook, brown the ground beef in a large skillet over medium heat, breaking it up with a spoon until fully cooked. Drain off any excess grease.

3. Stir the ricotta cheese into the cooked ground beef until combined. Spread a thin layer of marinara sauce in the bottom of a glass casserole dish.

4. Fill each cooked shell with the beef and ricotta mixture, then arrange the stuffed shells in the prepared casserole dish. Spoon the remaining marinara sauce evenly over the top.

5. Cover the dish with foil and bake for 25 minutes, then uncover and bake for 10 more minutes until heated through and bubbly. Let cool for 5 minutes before serving.

Variations & Tips

Make it extra cheesy: If you have a little flexibility beyond the four core ingredients, sprinkle mozzarella or Parmesan over the top before the final bake for a more classic stuffed-shell finish.

Meal prep shortcut: You can assemble the shells earlier in the day, cover the dish, and refrigerate it until you are ready to bake. This is the kind of recipe that makes busy weeknights feel much more manageable.

Freezer tip: Freeze the assembled unbaked shells in a tightly wrapped casserole dish for up to 2 months. Thaw in the refrigerator overnight before baking, or bake from cold and add a little extra covered baking time.

Swap the protein: Ground turkey or Italian sausage also work well here if that is what you have on hand. Sausage gives the dish a slightly bolder flavor, while turkey keeps it a bit lighter.
