There are some recipes that earn their place at every church supper, graduation party, and backyard cookout simply because folks can’t stop dipping into them, and this slow cooker sweet chili cream cheese dip is one of those. It’s the kind of easy Midwestern party food that feels right at home beside a basket of chips and a table full of casseroles, made with just a handful of ingredients and a cream cheese block that melts down into something rich, a little sweet, and just tangy enough to keep everybody coming back for one more scoop.

Serve this dip warm with sturdy tortilla chips, buttery crackers, pita chips, or crisp celery sticks if you want a little freshness on the table. It also fits in nicely with other cookout favorites like cocktail meatballs, veggie trays, baked beans, and sliders, and a cold glass of iced tea or lemonade makes a mighty fine pairing when the weather is warm.

Ingredients

1 block (8 ounces) cream cheese

1 cup sweet chili sauce
1 cup cooked shredded chicken
1 cup shredded mozzarella cheese
2 green onions, thinly sliced

Directions

1. Lightly grease the inside of a small slow cooker or crock liner. Place the block of cream cheese in the bottom, then pour the sweet chili sauce over the top. Add the shredded chicken and mozzarella cheese.

2. Cover and cook on low for 1 1/2 to 2 hours, until the cream cheese is softened and the cheese is melted.

3. Stir well until the dip is smooth and evenly combined. Sprinkle in most of the green onions, saving a few for the top.

4. Cover and cook for 10 to 15 minutes more, just until heated through. Sprinkle the remaining green onions on top and serve warm straight from the slow cooker.

5. Set out with chips, crackers, or cut vegetables, and watch that crock get scraped clean.

Variations & Tips

Make it spicier: If your crowd likes a little more kick, stir in a spoonful of sriracha, a pinch of red pepper flakes, or a diced jalapeño. Sweet chili sauce is usually mild, so this is an easy way to wake it up without changing the dip too much.

Swap the protein: Cooked shredded turkey or finely chopped rotisserie chicken both work beautifully here. If you’ve got holiday turkey tucked in the freezer, this is a fine way to give it a second life.

Keep it smooth: For the creamiest texture, cut the cream cheese into a few chunks before adding it to the slow cooker and give the dip a good stir once everything has softened. That helps the sauce and cheese come together without lumps.

Don’t overcook: Since everything in this dip is already safe to eat, you’re really just heating and melting. Too much time in the slow cooker can make the edges brown or the cheese turn a little stringy, so once it’s hot, switch to warm.

Make-ahead tip: You can place the cream cheese, sweet chili sauce, chicken, and mozzarella in the slow cooker insert ahead of time and refrigerate it for several hours. When you’re ready, set it in the cooker and heat as directed, then add the green onions right before serving.
