These low carb 3-ingredient kielbasa Rockford bites are the kind of retro party snack that never goes out of style. My father-in-law first made them for a neighborhood block party back in 1978, and they still disappear just as fast today. They are salty, cheesy, savory, and incredibly easy to throw together on a busy weeknight or before guests arrive, which is exactly why I keep coming back to them.
Serve these warm straight from the tray with toothpicks for easy snacking, or turn them into a casual meal with a crisp green salad, roasted broccoli, cauliflower mash, or a platter of pickles and raw veggies. They also pair well with sparkling water, light beer, or a simple iced tea if you are setting them out for game day or a family get-together.
Low Carb 3-Ingredient Kielbasa Rockford Bites
Servings: 8
Ingredients
2 (14-ounce) kielbasa sausages, sliced into 1/2-inch rounds
Directions
1. Preheat the oven to 375°F and lightly line a foil tray or small rimmed baking sheet with foil for easy cleanup.
2. Arrange the kielbasa slices in a single layer on the tray, leaving a little space between the pieces.
3. Spread a small spoonful of softened cream cheese over each kielbasa slice, then top each one with a pinch of shredded cheddar.
4. Bake for 12 to 15 minutes, or until the sausage is heated through and the cheese is melted, bubbly, and lightly browned around the edges.
5. Let the bites cool for 2 to 3 minutes, then serve warm right from the tray with toothpicks or a small fork.
Variations & Tips
Add a little heat: If your crowd likes a spicy snack, add a thin slice of pickled jalapeño under the cheese or use pepper jack in place of some of the cheddar. It is still simple, but it gives the bites a little extra kick.
Use smoked sausage or turkey kielbasa: Regular kielbasa brings the most classic flavor, but smoked sausage or turkey kielbasa both work well if that is what you already have in the fridge. Just keep the slices about the same thickness so they cook evenly.
Make-ahead tip: You can assemble the bites a few hours in advance, cover the tray, and refrigerate it until you are ready to bake. This is one of my favorite tricks when I am juggling work, dinner, and guests all in the same evening.
Watch the cheese closely: Since ovens vary, start checking at the 12-minute mark. You want the cheese melted and lightly golden, not overly dark, so the bites stay creamy on top and juicy underneath.
