This slow cooker 4-ingredient beef and bean cowboy skillet is the kind of dinner that saves a busy weekday when you need something filling with almost no prep. It leans on pantry staples like canned baked beans and simple seasoning to create a sweet-savory, stick-to-your-ribs meal that tastes like classic cowboy-style comfort food, even though the slow cooker does most of the work for you.

Spoon it into bowls with cornbread, buttered toast, or crackers for an easy supper, or serve it with a crisp green salad to balance the richness. It also works well topped with shredded cheddar, sliced green onions, or a dollop of sour cream, and leftovers are great over baked potatoes or rice the next day.

Ingredients

1 pound ground beef

1 can (28 ounces) baked beans
1 can (15.25 ounces) whole kernel corn, drained
1 cup barbecue sauce

Directions

1. Add the ground beef to the bottom of the slow cooker insert, breaking it up slightly with a spoon so it cooks more evenly.

2. Pour the baked beans over the beef, then add the drained corn and barbecue sauce on top.

3. Stir everything together until the beef is evenly distributed and coated in the sauce.

4. Cover and cook on LOW for 5 to 6 hours or on HIGH for 3 to 4 hours, stirring once or twice if convenient, until the beef is fully cooked and the mixture is hot and thick.

5. Give it a final stir, taste and adjust if needed, then serve hot in bowls on its own or with your favorite toppings and sides.

Variations & Tips

Add a little heat: Stir in a spoonful of chipotle sauce, a diced jalapeno, or a few dashes of hot sauce if your family likes a smoky kick. Since baked beans are already a little sweet, spice balances them nicely.

Make it stretch: For an even heartier meal, serve the beef and bean mixture over rice, baked potatoes, or buttered egg noodles. This is one of my favorite ways to turn simple pantry ingredients into enough dinner for two nights.

Cheesy topping: Sprinkle shredded cheddar, pepper jack, or a Colby blend over each serving right before eating. The residual heat melts it just enough and makes the whole bowl feel a little more like a cozy casserole.

Prep-ahead tip: If you want a little less grease, brown and drain the ground beef the night before, then refrigerate it and combine everything in the slow cooker the next day. It is still very easy, but can be a helpful option if you are leaving the house while it cooks.

Swap ideas: Try ground turkey instead of beef, or use a can of drained black beans or pinto beans in place of the corn for a different texture. Just keep the total amount of add-ins about the same so the sauce stays thick and hearty.
