There is something mighty comforting about a warm dip bubbling away in the slow cooker while folks gather in the kitchen or around the television, and this jalapeño popper dip is just the sort of easy little recipe that earns a permanent place in the family notebook. Inspired by the flavors of classic jalapeño poppers but made simpler with canned diced jalapeños, it brings creamy richness, a gentle kick, and that irresistible melted-cheese finish without any fuss at all.

Set this dip out with sturdy tortilla chips, buttery crackers, toasted baguette slices, or crisp celery sticks if you want a cool crunch alongside all that creamy goodness. For game day, I like to serve it with a tray of little sandwiches, a pot of chili, or smoked sausages, since the rich dip pairs nicely with hearty party fare and keeps everybody happily snacking.

Ingredients

8 ounces cream cheese, softened

1 cup sour cream
2 cups shredded cheddar cheese, divided
1 can (4 ounces) diced jalapeños, drained

Directions

1. Lightly grease the inside of a small slow cooker. Add the cream cheese, sour cream, 1 1/2 cups of the shredded cheddar, and the drained diced jalapeños.

2. Stir everything together until well combined, then cover and cook on low for 1 1/2 to 2 hours, stirring once or twice if you are nearby, until hot and creamy.

3. Sprinkle the remaining 1/2 cup cheddar cheese over the top, cover again, and cook just until the cheese is melted.

4. Give the dip a gentle stir if you like, or leave the melted cheese on top for serving. Serve warm with tortilla chips, crackers, or fresh vegetables.

Variations & Tips

Make it milder: If you want the flavor without too much heat, use mild diced jalapeños and be sure to drain them well. You can also stir in a little extra sour cream to soften the spice even more.

Make it sharper: For a bolder cheese flavor, swap part of the cheddar for pepper jack or extra-sharp cheddar. It gives the dip a little more personality while still keeping that creamy, scoopable texture.

Keep it smooth: Softened cream cheese melts more evenly and helps the dip come together without lumps. If your cream cheese is still cold, cut it into cubes before adding it to the slow cooker.

Hold for a party: Once the dip is hot, turn the slow cooker to warm so it stays perfectly dippable through the game. Give it a stir now and then if it sits awhile, especially around the edges.
