It is budget-friendly, filling, and surprisingly rich for something made with just a handful of ingredients, and I love that the sausage does nearly all the seasoning work on its own. Once everything is layered into the crock pot, the rest of the day feels a little easier.

1 lb Italian sausage, browned and drained
Directions
1. In a skillet over medium heat, brown the Italian sausage until fully cooked, breaking it into crumbles as it cooks. Drain if needed, but scrape every bit of the flavorful drippings and browned bits into the slow cooker along with the sausage.
2. Add the thinly sliced potatoes to the slow cooker, then pour in the chicken broth. Stir gently so the sausage is distributed through the pot.
3. Cover and cook on low for 6 to 7 hours, or until the potatoes are completely tender. Try to keep the potato slices even so they all finish cooking at the same time.
4. During the last 30 minutes of cooking, stir in the heavy cream and the chopped kale. Cover again and cook until the kale is wilted but still bright green and the broth is creamy. Do not add the cream too early or it can curdle.
5. Ladle into bowls and serve hot. For the best texture and presentation, make sure the broth is silky, the potatoes are tender, and each bowl gets plenty of sausage and kale.
Variations & Tips
Make it a little lighter: You can use half-and-half instead of heavy cream for a slightly lighter broth, though it will not be quite as rich. Just be extra careful to add it only at the end and keep the slow cooker on low.
Prep-ahead shortcut: Brown the sausage and slice the potatoes the night before so morning assembly takes just a few minutes. This is one of my favorite ways to make a busy workday feel more manageable.
Add more greens: If you like a greener bowl, add an extra handful of kale in the last 20 to 30 minutes. Baby spinach can work too, but it will soften much faster than kale.
