Ingredients
1 sheet frozen puff pastry, thawed
Directions
1. Preheat the oven to 400°F and line a baking sheet with foil or parchment paper. Lightly unfold the thawed puff pastry on a clean surface and cut it into 12 even squares.
2. Place a small fold of roast beef and a piece of cheddar in the center of each pastry square. Do not overfill or the cheese may leak too much while baking.
3. Fold each square over into a rectangle or triangle and press the edges closed with the tines of a fork. Transfer the puffs to the prepared baking sheet, leaving a little space between them.
4. Brush the tops with the beaten egg. Bake for 15 to 18 minutes, or until the pastry is puffed and deep golden brown and the cheese is melted.
5. Let the puffs cool for 5 minutes before serving so the filling can settle slightly. Serve warm.
