This is the kind of easy dessert I lean on when I need something crowd-pleasing without turning a weeknight into a baking project. Store-bought cookie dough does all the heavy lifting for the crust and topping, while a quick cream cheese filling bakes up soft, creamy, and sliceable after a good chill in the fridge. It feels a little nostalgic, a little potluck-friendly, and exactly like the sort of pan dessert that disappears fast at family gatherings.

Serve these chilled or just slightly cool for the cleanest squares, with hot coffee, cold milk, or a scoop of vanilla ice cream if you want to make them extra special. For a party tray, I like to cut them into smaller bars since they are rich, and they also fit right in with fruit platters, brownies, or a simple after-dinner dessert spread.

Ingredients

2 rolls (16.5 ounces each) refrigerated chocolate chip cookie dough

2 blocks (8 ounces each) cream cheese, softened
1/2 cup sugar
1 large egg

Directions

1. Preheat the oven to 350°F. Lightly grease a 9x13-inch glass baking dish.

2. Press 1 roll of the refrigerated chocolate chip cookie dough evenly across the bottom of the prepared baking dish to form the crust. There is no need to pre-bake it.

3. In a medium bowl, beat the softened cream cheese, sugar, and egg until smooth and creamy with no large lumps.

4. Spread the cream cheese mixture evenly over the raw cookie dough layer.

5. Flatten pieces of the remaining roll of cookie dough and arrange them over the top of the filling, covering most of the surface.

6. Bake for 30 to 35 minutes, until the top is golden and the center still jiggles slightly when the dish is gently moved.

7. Let the bars cool completely at room temperature, then chill for at least 2 hours before slicing so the filling can fully set.

8. Cut into bars and serve chilled or slightly cool.

Variations & Tips

For cleaner slices: Line the baking dish with parchment paper before pressing in the dough if you want to lift the whole slab out before cutting. I find this especially helpful when making these for a potluck or packing them up for a work event.

Chill time matters: It can be tempting to cut in early, but these really need the full chill so the cheesecake layer firms up. If they seem soft in the center, give them extra refrigerator time rather than baking longer.

Different cookie dough: This works nicely with other refrigerated dough flavors too, like sugar cookie or peanut butter chip, if you want to change up the flavor without changing the method.

Make-ahead tip: These are actually better after a few hours in the fridge, so they are a great dessert to prepare the night before. Keep them covered and chilled, then slice just before serving for the neatest presentation.
