Some nights call for the kind of dinner you can start with almost no effort and still have everybody asking for seconds. This cozy crockpot meal is built from pantry and freezer basics, making it a dependable choice for busy weekdays, cold evenings, or any time you want a warm homemade supper without a lot of prep.
This soup is especially nice with warm dinner rolls, buttery crackers, or a simple green salad to balance the creamy richness. If you want to make it feel extra comforting, set out shredded cheddar, crumbled bacon, sliced green onions, or a little black pepper at the table so everyone can top their own bowl just the way they like it.
Slow Cooker 4-Ingredient Hash Brown Potato Soup
Servings: 6
Ingredients
1 bag (2 lb) frozen shredded hash browns
Directions
1. Add the frozen shredded hash browns to the slow cooker.
2. Pour in the chicken broth, then add the condensed cream of chicken soup. Stir well to combine.
3. Cut the cream cheese into chunks and place them on top. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the potatoes are tender and the cream cheese is very soft.
4. Stir until the cream cheese melts fully into the soup. For a smoother texture, mash some of the potatoes with a spoon while stirring. Serve hot.
Variations & Tips
For a thicker soup: If your family likes potato soup extra hearty, let it cook uncovered for the last 20 to 30 minutes, or mash more of the potatoes into the broth before serving.
For picky eaters: Leave the soup just as it is for a very mild, creamy flavor. Then offer toppings on the side so each person can dress up their own bowl without changing the whole pot.
For extra flavor: Stir in a cup of shredded cheddar at the end, or top bowls with cooked bacon and green onions if you want it to taste more like a loaded baked potato soup.
Make it a little lighter: You can use reduced-fat cream cheese if needed. The soup may be a touch less rich, but it will still turn out creamy and comforting.
Slow cooker tip: Every crockpot runs a little differently, so check the potatoes near the end of cooking time. Once they are tender and the cream cheese stirs in smoothly, it is ready to serve.
