Some recipes earn their place by being fancy, and some earn it by showing up faithfully when people are hungry and time is short. This one belongs to that second, wonderful group. It comes from the kind of practical Midwestern cooking that knows how to stretch a pound of beef, make vegetables welcome, and tuck everything into a warm, comforting package that travels well and disappears fast at potlucks, ball games, and family tables alike.

Serve these warm with a bowl of tomato soup, a scoop of mustard potato salad, or a tray of crunchy pickles and raw vegetables for an easy supper or game-day spread. They also go mighty well with baked beans, a simple green salad, or a little cup of yellow mustard on the side for folks who like a tangy bite with all that flaky crust and savory filling.

Ingredients

1 pound ground beef

3 cups shredded cabbage
1 can refrigerated crescent dough sheet, or 2 packages crescent roll dough pressed together
4 slices American cheese, halved

Directions

1. Preheat the oven to 375°F and line a baking sheet with parchment paper.

2. In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon. Add the shredded cabbage and cook for 5 to 7 minutes more, until the cabbage softens. Drain off any excess grease and let the mixture cool for a few minutes.

3. Unroll the crescent dough and separate or cut it into 8 rectangles. Place a small mound of the beef and cabbage mixture in the center of each piece, then top each with a half slice of American cheese.

4. Fold the dough over the filling and pinch the edges shut to make neat pockets. Arrange them seam-side down on the prepared baking sheet.

5. Bake for 12 to 15 minutes, or until the tops are puffed and deep golden brown. Let them rest for 5 minutes before serving.

Variations & Tips

Add a little seasoning: If your family likes a touch more flavor, stir in a pinch of black pepper, garlic powder, or onion powder while the beef cooks. Even simple recipes can handle a little pantry help.

Keep the filling from getting soggy: Cabbage gives off moisture as it cooks, so be sure to drain the skillet well and let the mixture cool a bit before filling the dough. That helps the bottoms bake up nicely instead of turning soft.

Make them smaller for parties: You can cut the dough into smaller portions and use less filling for appetizer-sized bites. They are just the thing for buffets, card parties, and those long Friday evenings when everybody grazes between chatter and the game.

Try a different cheese: American cheese melts beautifully, but mozzarella, provolone, or cheddar will work too if that is what you have in the icebox. Pick something mild and melty so it tucks right into the filling.

Make ahead tip: Cook the beef and cabbage mixture a day ahead and keep it chilled in the refrigerator. When you are ready, just fill, fold, and bake, which makes this recipe especially handy for busy evenings.
