2 cups self-rising cornmeal mix

1 egg
1/2 small onion, grated
Oil for frying

Directions

1. Pour about 2 inches of oil into a deep skillet or heavy pot and heat it over medium heat until it reaches 350°F.

2. In a medium mixing bowl, stir together the self-rising cornmeal mix, buttermilk, egg, and grated onion until a thick batter forms. Let it sit for 5 minutes to hydrate.

3. Use a small cookie scoop or spoon to carefully drop rounded portions of batter into the hot oil, working in batches so the pan does not get crowded.
