Slow cooker cranberry balsamic pork chops are the kind of cool-weather dinner that earns a permanent place in the rotation: minimal prep, a short ingredient list, and a sauce that tastes far more complex than the work involved would suggest. The combination of tart cranberry and mellow balsamic has a familiar autumn feel, and as the pork cooks low and slow, it becomes exceptionally tender while the sauce turns glossy, savory, and sweet-tart. It is easy to see why a family cook would return to this every October.

Serve these pork chops over mashed potatoes, buttered egg noodles, or soft polenta so none of the cranberry-balsamic sauce goes to waste. For balance, add a simple green vegetable such as roasted Brussels sprouts, green beans, or steamed broccoli, and if you want a seasonal table, a crisp apple salad or roasted sweet potatoes pair especially well with the tangy richness of the dish.

Ingredients

4 bone-in or boneless pork chops, about 1 to 1 1/2 inches thick

1 can (14 ounces) whole berry cranberry sauce
1/2 cup balsamic vinegar
1 packet (about 1 ounce) onion soup mix
Optional for serving: chopped parsley or fresh thyme

Directions

1. Lightly coat the inside of the slow cooker crock if needed, then arrange the pork chops in an even layer, overlapping slightly only if necessary.

2. In a medium bowl, stir together the cranberry sauce, balsamic vinegar, and onion soup mix until fully combined.

3. Pour the cranberry mixture over the pork chops, making sure the tops are well coated. Cover and cook on low for 5 to 6 hours or on high for 2 1/2 to 3 1/2 hours, until the pork is very tender.

4. Once cooked, gently spoon some of the sauce over the pork chops before serving. If you prefer a thicker sauce, transfer the liquid to a saucepan and simmer for a few minutes until reduced, then pour it back over the meat.

Variations & Tips

Use thicker chops: Thick-cut pork chops hold up best in the slow cooker and are less likely to dry out. Thin chops can overcook before the sauce has time to develop.

Add fresh cranberries: If you have them, stir in a small handful of fresh cranberries during the last hour of cooking for brighter tartness and a more textured sauce.

Balance the sweetness: Cranberry sauce brands vary quite a bit in sweetness. If your sauce tastes especially sweet, add an extra teaspoon or two of balsamic vinegar before cooking to sharpen the flavor.

Make it a freezer meal: Combine the pork chops, cranberry sauce, balsamic vinegar, and onion soup mix in a freezer bag and freeze flat. Thaw in the refrigerator overnight before adding everything to the slow cooker.

Try a holiday version: For a more festive finish, garnish the cooked pork chops with a little fresh thyme or parsley and serve alongside roasted sweet potatoes or wild rice.
