These oven baked 3-ingredient roast beef and smoked provolone crescent pumpkins are one of those clever little fall recipes that feel festive without asking much from the cook. They have that practical Midwestern charm I’ve always loved: simple store-bought ingredients, a warm oven, and something hearty enough to set out for game day, Halloween supper, or an October get-together. The pumpkin shape makes them memorable, while the roast beef and smoky cheese tucked inside make them satisfying enough that folks always reach for a second one.
Serve these warm with a bowl of tomato soup, a crock of chili, or a crisp green salad if you want to round them into a meal. They also fit right in on an appetizer table with pickles, mustard dip, roasted vegetables, or a tray of apples and grapes. For drinks, hot cider and sparkling lemonade both pair nicely, and if you’re putting out a game-day spread, a simple platter of chips and cut vegetables works just fine alongside them.
Oven Baked 3-Ingredient Roast Beef and Smoked Provolone Crescent Pumpkins
Servings: 8 crescent pumpkins
Ingredients
1 can refrigerated crescent roll dough (8-count)
Directions
1. Preheat the oven to 375°F and line a baking sheet with foil or parchment paper. Separate the crescent dough into 8 triangles and lay them out on your work surface.
2. Place 1 slice of roast beef and 1 half-slice of smoked provolone on each crescent triangle, keeping the filling centered so the dough can be shaped around it.
3. Roll each crescent up from the wide end toward the tip, then gently curve and pinch the dough a bit to give each one a rounded pumpkin-like shape. Place them on the prepared baking sheet with a little space between them.
4. Bake for 11 to 14 minutes, or until the crescents are puffed and golden brown and the cheese is melted inside. Let them cool for a few minutes before serving.
Variations & Tips
Make them neater: If the roast beef slices are large, fold or tear them into smaller portions so they stay tucked inside the dough. That helps the crescents keep their pumpkin shape and prevents filling from slipping out while baking.
Add a little seasoning: Even with just three ingredients, you can brush the tops with a bit of melted butter and sprinkle on a pinch of garlic powder or Italian seasoning before baking if you want a little extra color and flavor.
Try a different cheese: Smoked provolone gives these a wonderful savory flavor, but Swiss, mozzarella, or cheddar can be used if that’s what you have on hand. Each one gives the finished crescents a slightly different look and taste.
Serve right away: These are at their very best warm from the oven, when the pastry is flaky and the cheese is soft. If you need to make them ahead, bake them shortly before serving and warm them for a few minutes in the oven to freshen them up.
