There are certain little party bites that seem to belong to the season, and these oven baked 3-ingredient corned beef and manchego crescent twists are just that sort of treat. They remind me of the kind of snack tray you’d find on a Midwestern kitchen counter during football weekends and October get-togethers, simple to make but gone in a flash. Salty corned beef, buttery crescent dough, and the rich nuttiness of manchego come together in a twist that looks special without asking much of the cook.

Serve these warm from the oven with a crock of grainy mustard or a little honey mustard for dipping. They fit right in beside a pot of soup, a fall salad with apples and walnuts, or a tray of pickles and olives for easy entertaining. If you’re setting out snacks for a game day spread, they pair especially well with hot cider, beer, or a cup of coffee for the folks lingering in the kitchen.

Ingredients

1 tube refrigerated crescent roll dough (8-count)

4 ounces thinly sliced corned beef, chopped or torn into short strips
1 cup shredded manchego cheese

Directions

1. Preheat your oven to 375°F and lightly grease a white ceramic casserole dish or line a baking sheet with parchment paper.

2. Unroll the crescent dough and separate it into rectangles by pinching the perforations of each pair of triangles together.

3. Scatter the chopped corned beef and shredded manchego evenly over each rectangle, leaving a small border around the edges.

4. Roll each rectangle up from the long side, then gently twist each piece into a spiral shape and place them in the prepared dish or on the baking sheet with a little space between them.

5. Bake for 14 to 18 minutes, until the twists are puffed and deeply golden with bits of melted cheese peeking out at the edges.

6. Let cool for 5 minutes before serving warm.

Variations & Tips

Add a little mustard: If you don’t mind stepping beyond the three-ingredient version, a very thin swipe of Dijon or whole grain mustard on the dough adds a fine tang that suits the corned beef beautifully.

Keep the cheese inside: Don’t overfill the rectangles or the manchego will tumble out as the dough puffs. A light, even layer gives you the prettiest twists and still plenty of flavor.

Try a different shape: You can cut each rolled piece in half before twisting for smaller appetizer bites. They bake a little faster, so start checking them a couple of minutes early.

Make-ahead tip: Assemble the twists a few hours ahead, cover, and refrigerate. When company comes through the door, all you need to do is slide the dish into the oven.
