Some recipes earn their place at the table because they are fancy, and some earn it because they disappear fast and have everybody asking who made them. This one is the kind of comforting, budget-friendly casserole-style dish that feels right at home at potlucks, holiday dinners, and busy weeknights, with simple pantry staples coming together into something rich and satisfying with hardly any fuss.

This creamy main dish is lovely with baked ham, fried chicken, barbecue, green beans, collard greens, or a crisp side salad to balance the richness. If you are taking it to a gathering, a basket of rolls and a spoonful of pepper sauce or hot sauce on the side make it feel extra special for folks who like a little kick.

Single serving of slow cooker macaroni and cheese on a white plate

Ingredients

1 lb dry elbow macaroni

1 can (12 oz) evaporated milk
2 cups whole milk
1/2 stick butter
4 cups shredded sharp cheddar

Directions

1. Cook the elbow macaroni in salted boiling water for about 2 minutes less than the package directions, then drain well.

2. Lightly butter the inside of the slow cooker if desired for easier cleanup, then add the drained macaroni, evaporated milk, whole milk, butter, and shredded sharp cheddar.

3. Stir everything together well, making sure the macaroni is evenly coated and the cheese is distributed throughout.

4. Cover and cook on low for 1 1/2 to 2 1/2 hours, stirring once or twice if your slow cooker runs hot, until the cheese is melted and the macaroni is tender and creamy.

5. Turn the slow cooker to warm if serving for a gathering, or spoon onto plates and serve right away while hot and creamy.

Variations & Tips

For extra cheesy texture: If your family likes a thicker, richer spoonful, hold back about 1/2 cup of the cheddar and stir it in during the last 15 minutes of cooking.

For picky eaters: Use mild cheddar in place of sharp if you want a gentler cheese flavor that still turns out creamy and comforting.

Watch the cooking time: Slow cookers can vary a lot, so start checking early. Once the pasta is tender, switch to warm so the edges do not overcook.

Best for potlucks: This dish travels well in the slow cooker. Line the outside with a towel for the ride, then plug it in on warm when you arrive to keep it smooth and scoopable.

Easy add-ins: If you are not keeping it strictly to five ingredients, a pinch of black pepper, a little dry mustard, or a dusting of paprika on top can add a nice homemade touch without changing the recipe much.
