Some recipes stick around for a reason, and this one has that old church-potluck, pass-me-the-recipe kind of magic. My aunt brought it back from Sioux Falls in 1973, and it quickly became one of those dependable family dinners everyone hoped would show up at Sunday supper. It leans on a handful of pantry and fridge basics, which makes it especially handy on busy work nights when you want something warm, hearty, and nostalgic without a lot of fuss.

This is rich and cozy, so I like serving it with something simple and fresh on the side, like a crisp green salad, steamed green beans, or roasted broccoli. If you want to stretch it for a bigger table, add garlic bread or warm dinner rolls, and for drinks, iced tea or sparkling water both work well with the creamy, tomatoey flavors.

Slow Cooker 5-Ingredient Sour Cream Noodle Bake

Ingredients

1 lb ground beef

1 can (15 oz) tomato sauce
8 oz dry egg noodles
1 cup sour cream
2 cups shredded cheddar

Directions

1. In a skillet over medium heat, cook the ground beef until fully browned, breaking it up as it cooks. Drain any excess grease, then stir in the tomato sauce and let it simmer for 2 to 3 minutes.

2. Meanwhile, cook the egg noodles in a pot of salted boiling water just until barely tender, about 2 minutes less than the package directions. Drain them well.

3. Lightly coat the slow cooker insert if desired for easier cleanup. Spread half of the noodles in the bottom, dollop half of the sour cream over them, then spoon over half of the beef mixture and sprinkle with 1 cup of the cheddar. Repeat the layers with the remaining noodles, sour cream, beef mixture, and cheddar.

4. Cover and cook on low for 2 to 3 hours, until heated through and the cheese is fully melted. Let it sit uncovered for 10 minutes before serving so the layers settle slightly.

Variations & Tips

Make-ahead tip: Brown the beef and cook the noodles the night before, then store them separately in the refrigerator. The next day, all you have to do is layer everything in the slow cooker and turn it on, which is a lifesaver on a packed weekday.

Texture tip: Be careful not to overcook the noodles before they go into the slow cooker, or they can get too soft by the end. Keeping them slightly underdone at the boiling stage helps the finished casserole hold together better.

Cheese swap: Sharp cheddar gives the most flavor, but mild cheddar or a cheddar-jack blend also works well if that is what you have on hand. If you like a more pronounced cheesy top, sprinkle a little extra over the last layer during the final 20 minutes.

Freezer note: This dish is best enjoyed fresh, but leftovers can be refrigerated for up to 3 days. Reheat individual portions gently in the microwave or warm larger portions covered in the oven so the sour cream layer stays creamy.
