When I want a Halloween dessert that looks festive without requiring a long afternoon in the kitchen, these baked mini pumpkins are one of my favorite shortcuts. Roasting whole unpeeled mini pumpkins turns them tender and naturally sweet, and with just a handful of pantry ingredients, they become a cozy dessert that feels a little special for fall gatherings, weeknight treats, or a fun date-night dessert at home.

Serve these warm with an extra spoonful of the buttery brown sugar syrup from the pan and, if you like, a scoop of vanilla ice cream or a dollop of whipped cream on the side. They also pair beautifully with hot coffee, chai, or apple cider, especially if you're putting together a simple Halloween dessert spread with cookies or caramel apples.

Ingredients

6 raw whole unpeeled mini pumpkins

1/2 cup brown sugar
1/4 cup unsalted butter, cut into small pieces
1 cup heavy cream
2 teaspoons ground cinnamon
1/4 teaspoon salt

Directions

1. Preheat your oven to 375°F. Rinse the mini pumpkins well, dry them, and arrange them whole in an oven-safe roasting pan. If needed, slice a very thin piece off the bottoms so they sit level without tipping.

2. Using a small sharp knife, cut the tops off each pumpkin and scoop out the seeds and stringy centers. Return the tops to the pan alongside the pumpkins or set them slightly tilted on top for a decorative look.

3. In a small bowl, stir together the brown sugar, cinnamon, and salt. Divide the mixture among the pumpkins, then add pieces of butter to each one. Pour the heavy cream into the roasting pan and a little into each pumpkin.

4. Cover the pan loosely with foil and bake for 35 minutes. Remove the foil and continue baking for 20 to 30 minutes more, or until the pumpkins are very tender when pierced with a knife and the cream and sugar mixture has turned into a bubbling sauce.

5. Let the pumpkins cool for 10 minutes, then spoon some of the sauce from the pan over each one and serve warm. Guests can eat the soft pumpkin flesh right from the shell with a spoon.

Variations & Tips

Vanilla finish: If you already have vanilla extract on hand and don't mind stepping past the six-ingredient idea, add a small splash to the cream for a bakery-style flavor that makes the whole kitchen smell amazing.

Sweeter dessert style: For a richer, more dessert-like result, serve each pumpkin with vanilla ice cream or whipped cream. The contrast of the cold topping and warm pumpkin is especially good.

Make-ahead tip: You can wash, hollow, and fill the pumpkins a few hours ahead, then keep the roasting pan covered in the fridge until it's time to bake. That's the kind of prep I love on busy evenings or before having people over.

Choosing pumpkins: Pick mini pumpkins that are similar in size so they bake evenly. Sugar pie-type mini pumpkins work best because they turn tender and sweet, while decorative pumpkins can stay stringy.

Texture tip: If your pumpkins are still firm after the suggested baking time, add another 10 to 15 minutes. The exact timing can vary a lot depending on their size and thickness, so tenderness matters more than the clock.
