These 3-ingredient brie clifford bites are the kind of retro party snack that earns a permanent place in the family playbook: fast to assemble, rich and buttery, and easy to pass around at bonfires, holiday gatherings, or casual fall get-togethers. With flaky pastry wrapped around creamy brie and a simple sweet accent, they bake into a warm, crowd-pleasing appetizer that feels a little special without asking much of the cook.

Serve these bites warm with spiced cider, dry sparkling wine, or a crisp apple drink if you want to lean into the autumn bonfire spirit. They pair especially well with fresh apple slices, grapes, toasted nuts, and other easy finger foods on an appetizer board, and they also fit nicely alongside simple soups or a roast chicken dinner when you want a starter that looks more elaborate than it is.

Ingredients

1 sheet frozen puff pastry, thawed

8 ounces brie cheese, cut into 24 small cubes
1/3 cup seedless raspberry jam

Directions

1. Preheat the oven to 400°F and lightly grease a 24-cup mini muffin tin, or line it if you prefer easier cleanup.

2. Roll the puff pastry slightly on a lightly floured surface and cut it into 24 even squares. Press one square into each mini muffin cup.

3. Place one cube of brie into each pastry cup, then spoon a small dollop of raspberry jam over the top of each piece of cheese.

4. Bake for 12 to 15 minutes, until the pastry is puffed and deep golden and the brie is melted. Let the bites cool in the pan for 5 minutes before gently removing them.

5. Transfer to a serving platter and serve warm while the centers are still creamy.

Variations & Tips

Jam swap: Apricot preserves, fig jam, or hot pepper jelly all work well here. Just keep the amount modest so the filling does not bubble over too much in the pan.

Make-ahead tip: You can assemble the pastry cups with brie and jam a few hours ahead, cover the pan, and refrigerate it until baking time. Bake straight from the refrigerator, adding a minute or two if needed.

Cheese tip: Brie rind is completely edible, so there is no need to trim it away for this recipe. Leaving it on makes prep quicker and helps the cubes hold their shape as you assemble the bites.

Crisper pastry: If your kitchen is warm, chill the filled muffin tin for 10 minutes before baking. Cold pastry puffs more dramatically and gives you better definition in those flaky layers.

Serving note: These are best warm, but not piping hot. A short rest after baking keeps the melted cheese from running too quickly and makes the bites easier to pick up and pass around.
