These oven baked 3-ingredient roast beef and smoked havarti crescent turnovers are the kind of easy little comfort food that disappears fast at fall gatherings, game nights, and family suppers. They come together with just a handful of store-bought ingredients, but the buttery crescent dough, savory roast beef, and melty smoked havarti make them taste extra special. This is a wonderful recipe to keep on hand when you need something warm, filling, and simple without a lot of prep.

Serve these turnovers with a bowl of tomato soup, a crisp green salad, or a big tray of raw vegetables and dip for an easy lunch or light supper. They also fit right in on an appetizer table with pickles, mustard, fruit, and chips, and for potlucks I like setting them out warm with a little dish of horseradish sauce or honey mustard on the side.

Ingredients

1 can refrigerated crescent roll dough (8-count)

8 slices deli roast beef
4 slices smoked havarti cheese, cut in half

Directions

1. Preheat the oven to 375°F and line a baking sheet with foil or parchment for easy cleanup.

2. Unroll the crescent dough and separate it into 8 triangles on a clean work surface.

3. Place 1 slice of roast beef and 1 half-slice of smoked havarti on the wide end of each triangle. Fold the roast beef as needed so it fits neatly.

4. Roll each triangle up from the wide end toward the point, tucking the filling in as you go, and gently curve the ends if you like. Set them seam-side down on the prepared baking sheet.

5. Bake for 11 to 14 minutes, or until the crescents are puffed and deep golden brown and the cheese is melted.

6. Let them cool for 3 to 5 minutes before serving so the filling can settle a bit. Serve warm.

Variations & Tips

For picky eaters: If smoked havarti feels a little too bold, swap it for plain havarti, provolone, or mozzarella for a milder flavor that still melts nicely.

Make-ahead tip: You can assemble the turnovers a few hours ahead, keep them covered in the refrigerator, and bake just before serving. This is especially handy when you're bringing food to a potluck or fall party.

Add a dipping sauce: These are delicious with honey mustard, horseradish sauce, or a little warm au jus on the side if you want them to feel more like mini roast beef sandwiches.

Keep the bottoms crisp: Bake on a preheated sheet pan or use parchment instead of foil if you prefer a slightly less soft bottom crust. Letting them rest for a couple of minutes after baking also helps keep the pastry from getting soggy.
