When I need a true set-it-and-forget-it dinner that can feed a crowd without wrecking the grocery budget, this slow cooker beef shoulder clod is one of my favorite tricks. A whole shoulder clod is a big, hardworking cut that turns unbelievably tender with low, slow cooking, and with just four ingredients you get rich, savory shredded beef that tastes like you fussed over it all day. It is the kind of practical Midwest dinner that works for busy weekdays, weekend family meals, or meal prep when you want one main dish to stretch into several different dinners.

This beef is especially good with mashed potatoes, buttered egg noodles, rice, or thick slices of bread to catch all the juices. For something lighter, serve it with roasted carrots, green beans, a crisp side salad, or simple coleslaw. The shredded beef also works beautifully piled onto sandwich buns, tucked into tortillas, or spooned over baked potatoes for easy leftovers later in the week.

Ingredients

1 whole beef shoulder clod roast, about 4 to 5 pounds

1 packet onion soup mix, about 1 ounce
1 cup beef broth
1/2 cup pepperoncini peppers with a little of their juice

Directions

1. Place the whole beef shoulder clod roast into the slow cooker insert. Sprinkle the onion soup mix evenly over the top.

2. Pour the beef broth around the roast, then add the pepperoncini peppers and a small splash of their juice.

3. Cover and cook on low for 8 to 10 hours, or until the beef is deeply browned, very tender, and easily pulls apart with two forks.

4. Shred the beef directly in the slow cooker, toss it gently in the juices, and serve hot.

Variations & Tips

For richer flavor: If you have an extra few minutes in the morning, sear the roast in a hot skillet before adding it to the slow cooker. This is completely optional, but it adds a deeper beefy flavor and a darker finished color.

For easier shredding: Let the roast rest in the cooker with the heat off for about 15 minutes before pulling it apart. That little pause makes it easier to handle and helps the meat hold onto more of the juices.

To stretch leftovers: This beef is great for meal prep. Use the leftovers in sandwiches, tacos, quesadillas, rice bowls, or over baked potatoes, and store the shredded meat with some of the cooking liquid so it stays moist.

If your roast is larger: A very large shoulder clod may need the full 10 hours or a bit longer depending on your slow cooker. The roast is done when it shreds easily without resistance; if it still feels firm, keep cooking.

For a slightly tangier version: Add a few extra pepperoncini peppers or another splash of the brine. It gives the beef a brighter finish without adding much work or cost.
