There is something about a pan of hot taquitos coming out of the oven that feels just right for cool-weather weekends, especially when folks are gathered around the television waiting for the game to start. This simple 4-ingredient version is the kind of practical, no-fuss appetizer Midwestern home cooks have always appreciated: seasoned beef, cheese, tortillas, and a little cooking spray turning into a tray of crisp, hearty bites that disappear faster than you expect.

Serve these taquitos with little bowls of salsa, sour cream, or guacamole for dipping, and if you want to make a fuller spread, set them out alongside chili, queso, a crunchy cabbage slaw, or a simple plate of pickles and olives. They also pair nicely with a cold cider, iced tea, or whatever folks like to sip during game day.

Ingredients

1 pound ground beef

1 packet taco seasoning
2 cups shredded yellow cheddar cheese
12 corn tortillas
Nonstick cooking spray

Directions

1. Preheat the oven to 425°F and line a baking sheet with foil. Lightly coat the foil with nonstick cooking spray.

2. In a skillet over medium heat, cook the ground beef until browned and crumbly. Drain off any excess grease, then stir in the taco seasoning and cook for 1 to 2 minutes more, just until well coated and fragrant.

3. Warm the corn tortillas for a few seconds in the microwave wrapped in a damp paper towel, or heat them briefly in a dry skillet, until soft and easy to roll without cracking.

4. Spoon a little of the beef mixture and a sprinkle of cheddar cheese onto each tortilla. Roll them up snugly and place them seam-side down on the prepared baking sheet.

5. Lightly spray the tops of the taquitos with nonstick cooking spray. Bake for 15 to 20 minutes, until the tortillas are crisp and golden and the cheese is melted. Serve warm.

Variations & Tips

Use Monterey Jack: If you want a milder, extra-melty filling, swap the cheddar for Monterey Jack or use half of each. It gives the taquitos a softer, creamier bite while still browning nicely in the oven.

Keep tortillas from cracking: Corn tortillas behave better when warmed before rolling. If they cool off and start splitting, wrap them up again and warm them another few seconds so the job stays easy.

Make them ahead: You can roll the taquitos a few hours in advance and keep them covered in the refrigerator on the baking sheet. When it is time to bake, give them a light spray and add a couple extra minutes in the oven.

Freeze for later: These freeze well after baking. Let them cool, freeze in a single layer, then tuck them into a freezer bag. Reheat in a hot oven or air fryer so they crisp back up instead of turning soft.
