Slow cooker cube steak is the kind of practical supper that earned its place in busy Midwestern kitchens years ago: inexpensive meat, a packet or two from the pantry, and a long gentle cook that turns everything into fork-tender comfort food. This 4-ingredient version keeps things especially simple by layering frozen beef cube steaks in the slow cooker, sprinkling over yellow gravy mix, and letting the crock do the work until the meat is coated in a rich savory gravy.
Serve these steaks over mashed potatoes, buttered egg noodles, or plain white rice so none of the gravy goes to waste. Green beans, corn, cooked carrots, or a simple side salad all round it out nicely, and a piece of warm bread or a biscuit on the side makes it feel like a full old-fashioned supper.
Slow Cooker 4-Ingredient Poor Man’s Steaks
Servings: 4 to 6
Ingredients
4 to 6 frozen beef cube steaks, about 2 to 2 1/2 pounds total
2 packets yellow gravy mix, about 0.87 to 1 ounce each
1 packet onion soup mix, about 1 ounce
2 cups water or low-sodium beef broth
Directions
1. Lightly coat the inside of a 5- to 6-quart slow cooker with nonstick spray if desired for easier cleanup. Arrange the frozen cube steaks in the bottom, overlapping slightly as needed.
2. Sprinkle the yellow gravy mix evenly over the steaks, then scatter the onion soup mix over the top.
3. Pour the water or beef broth around and over the meat. Cover with the lid and cook on low for 6 to 8 hours or on high for 4 to 5 hours, until the beef is very tender.
4. Once cooked, gently separate the steaks with tongs or a spoon. Stir the gravy in the slow cooker so it becomes smooth and coats the meat well. If you want a slightly thicker gravy, leave the lid off for 10 to 15 minutes on high before serving.
5. Serve the cube steaks hot with plenty of gravy spooned over mashed potatoes, noodles, or rice.
Variations & Tips
Mushroom version: Add 1 drained can of sliced mushrooms or 8 ounces fresh sliced mushrooms to the slow cooker for extra savory flavor. Mushrooms pair especially well if you plan to serve the steaks over egg noodles.
Thicker gravy: If you prefer a more substantial gravy, whisk 1 tablespoon cornstarch with 2 tablespoons cold water near the end of cooking, then stir it into the slow cooker and cook on high for 10 to 15 minutes more.
Lower-sodium tip: Use low-sodium broth and, if available, reduced-sodium gravy or soup mixes, since packet mixes can be quite salty. Balance the richness with plain mashed potatoes or unsalted rice.
Do not lift the lid often: Slow cookers lose a surprising amount of heat each time the lid is removed, which can lengthen the cooking time. Check for doneness only toward the end, when the steaks should break apart easily with a fork.
Storage and reheating: Refrigerate leftovers in a covered container for up to 3 days. Reheat gently on the stovetop or in the microwave with a splash of water or broth to loosen the gravy.
