This slow cooker Amish rosemary beef is the kind of practical, old-fashioned supper that earns a permanent place in a busy household. With just beef, fresh rosemary, and two pantry-friendly ingredients, it leans on slow cooking rather than fuss to create a tender, savory roast with a simple gravy-like finish. The flavor is straightforward and comforting, reflecting the kind of resourceful home cooking often associated with Amish kitchens, where hearty ingredients and patience do most of the work.
Serve this beef with mashed potatoes, buttered egg noodles, or steamed rice to catch the juices, and add a plainly cooked vegetable such as green beans, glazed carrots, or sweet corn on the side. Warm dinner rolls or thick slices of bread also fit nicely, especially if you want to make the most of the rosemary-scented broth from the slow cooker.
Slow Cooker 4-Ingredient Amish Rosemary Beef
Servings: 6
Ingredients
2 1/2 to 3 pounds beef sirloin tip steak
6 to 8 fresh rosemary sprigs
1 packet dry onion soup mix
1 cup beef broth
Directions
1. Lightly coat the inside of the slow cooker crock if desired for easier cleanup, then place the beef sirloin tip steak inside in an even layer.
2. Press the fresh rosemary sprigs directly onto the surface of the raw beef, tucking some along the sides so the herb flavor perfumes the meat as it cooks.
3. Sprinkle the dry onion soup mix evenly over the beef and rosemary, then pour the beef broth around the meat so the seasoning stays mostly on top.
4. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the beef is very tender and easy to slice or shred with a fork.
5. Transfer the beef to a cutting board, let it rest for 5 to 10 minutes, then slice against the grain or shred into large pieces. Spoon some of the cooking juices over the top before serving.
Variations & Tips
Add garlic: If you do not mind moving beyond the strict four-ingredient version, add 3 to 4 smashed garlic cloves to the slow cooker. Garlic works especially well with rosemary and gives the broth a deeper, more rounded flavor.
For a thicker sauce: After the beef is done, remove it from the cooker and whisk 1 tablespoon cornstarch with 1 tablespoon cold water. Stir that slurry into the hot cooking liquid, cover, and cook on high for 10 to 15 minutes until slightly thickened.
Use a chuck roast instead: Sirloin tip stays sliceable, but a chuck roast is an excellent substitute if you prefer a richer, more shreddable result. Keep the rosemary amount about the same so the herb flavor does not overwhelm the beef.
Rosemary tip: If the rosemary stems are very woody, strip some of the leaves from the lower half before pressing the sprigs onto the beef. This helps release more fragrance into the meat and makes the finished dish easier to serve.
Make-ahead note: This recipe can be assembled in the crock the night before, covered, and refrigerated if your slow cooker insert is refrigerator-safe. In the morning, place it in the cooker base and start cooking, adding a few extra minutes if the insert is very cold.
