Slow cooker cowboy beef and beans is the kind of comforting, budget-friendly supper that makes a busy day feel manageable. With just four simple ingredients and almost no prep, this hearty dish leans on canned baked beans for sweetness and body, while ground beef and a couple pantry staples turn it into a filling meal that tastes like a backyard cookout crossed with an easy weeknight casserole.
This dish is wonderful with warm cornbread, buttered toast, biscuits, or a simple green salad to balance the richness. If you want to stretch it for a bigger family meal, spoon it over baked potatoes, rice, or even macaroni, and set out shredded cheddar, sliced green onions, and extra barbecue sauce so everyone can dress up their own bowl.
Slow Cooker 4-Ingredient Cowboy Beef and Beans
Servings: 6
Ingredients
1 pound ground beef
1 medium onion, diced
1 can (28 ounces) canned baked beans
1 cup barbecue sauce
Directions
1. Lightly grease the slow cooker insert if desired. Add the raw ground beef to the bottom of the slow cooker and break it up a little with a spoon. Scatter the diced onion over the top.
2. Pour the canned baked beans over the beef and onion, then pour the barbecue sauce on top.
3. Cover and cook on LOW for 5 to 6 hours or on HIGH for 3 to 4 hours, stirring once or twice if convenient, until the beef is fully cooked and the onions are tender.
4. Stir well to break up the beef completely and combine everything into a thick, hearty mixture. Taste and serve hot.
Variations & Tips
For a smokier flavor: Add 1/2 teaspoon smoked paprika or a few dashes of liquid smoke. This gives the dish a cookout-style taste without adding extra work.
For picky eaters: Grate the onion instead of dicing it so it melts into the sauce more easily. If your family likes sweeter beans, use a honey or brown sugar barbecue sauce.
To reduce grease: If you use beef with a higher fat content, brown it first in a skillet and drain it before adding it to the slow cooker. It adds one extra step, but the finished beans will be less oily.
To make it stretch: Spoon the beef and beans over baked potatoes, rice, or toasted buns for a really filling meal. This is one of my favorite ways to feed a hungry group without using more meat.
To change it up: Stir in cooked bacon, a little mustard, or some shredded cheddar just before serving for a slightly different cowboy beans flavor. You can also add a pinch of chili powder if your family likes a little gentle heat.
