This 3-ingredient slow cooker beef roast is the kind of comforting dinner that feels special without making your day harder. It is a simple tribute-style meal built around a hearty sirloin tip roast, letting the slow cooker do the work while the beef turns tender and flavorful. I love recipes like this on busy weekdays because you can set it up in the morning and come home to a house that smells like you spent all day cooking.
Serve this roast with mashed potatoes, buttered egg noodles, or simple roasted vegetables to soak up the savory juices. If you want to keep things easy, a green salad and a loaf of warm bread make it a full meal, and leftovers are great piled onto sandwich rolls with a little of the cooking liquid.
3-Ingredient Slow Cooker Patriot Day Tribute
Servings: 6
Ingredients
1 whole raw beef sirloin tip roast, about 3 to 4 pounds
1 packet dry onion soup mix, about 1 ounce
1 cup pepperoncini peppers with a little of the brine, about 8 to 10 peppers plus 1/4 cup brine
Directions
1. Pat the sirloin tip roast dry with paper towels and place it in the bottom of a slow cooker.
2. Sprinkle the dry onion soup mix evenly over the top of the roast.
3. Add the pepperoncini peppers and pour in about 1/4 cup of the brine around the roast.
4. Cover and cook on low for 8 to 9 hours or on high for 5 to 6 hours, until the beef is very tender and easily pulls apart with a fork.
5. Transfer the roast to a cutting board, slice or shred as desired, then spoon some of the cooking juices and peppers over the top before serving.
Variations & Tips
For extra savory flavor: If you are not strictly keeping it to three ingredients, add a cup of low-sodium beef broth to make more juices for serving over potatoes or noodles.
For easier slicing: Let the roast rest for about 10 minutes before slicing. If it gets fall-apart tender, shredding it and tossing it back in the juices works just as well.
For meal prep: Store leftovers in an airtight container with some of the cooking liquid so the beef stays moist. It reheats well for lunches, sandwiches, or grain bowls the next day.
For a milder version: Use fewer pepperoncini and just a splash of brine if you want the tangy flavor without quite as much zip.
