When I need a dinner that feels like real comfort food without turning my whole evening into a project, this oven baked 5-ingredient cube steak is one of the first recipes I pull out. It has that old-school, hearty Midwest supper energy: tenderized beef baked low and slow until it softens up, all tucked under a rich oniony gravy that tastes like you worked much harder than you actually did. This is the kind of meal that makes plain pantry ingredients feel special, and it is especially handy on busy weeknights when you want something warm and filling with very little prep.
This cube steak is especially good with mashed potatoes, buttered egg noodles, or steamed white rice so none of that pan gravy goes to waste. For vegetables, I like simple green beans, roasted carrots, or buttery corn on the side. If you want to lean into the comfort-food vibe, add warm biscuits or thick slices of bread for swiping through the sauce.
Oven Baked 5-Ingredient Cube Steak
Servings: 4
Ingredients
4 cube steaks, about 1 1/2 to 2 pounds total
1 packet onion soup mix
1 can (10 1/2 ounces) cream of mushroom soup
1 can (10 1/2 ounces) beef broth soup, or 1 1/4 cups condensed beef broth
1 medium onion, thinly sliced
Directions
1. Preheat the oven to 325°F. Lightly coat a medium baking dish or oval stoneware dish with cooking spray or a thin film of oil.
2. Arrange the cube steaks in the baking dish, overlapping slightly if needed. Scatter the sliced onion over the top.
3. In a bowl, stir together the onion soup mix, cream of mushroom soup, and beef broth soup until smooth. Pour the mixture evenly over the steaks and onions.
4. Cover the dish tightly with foil and bake for 1 hour and 45 minutes to 2 hours, or until the cube steak is fork-tender and the onions have melted into the gravy.
5. Let the dish rest for 5 to 10 minutes before serving. Spoon plenty of the pan gravy over each steak and serve hot with mashed potatoes, noodles, or rice.
Variations & Tips
Make it creamier: If you like an extra velvety gravy, stir in 1/4 cup sour cream after baking and resting. It gives the sauce a slightly richer texture that is really good over egg noodles.
Add mushrooms: A handful of sliced mushrooms can go right into the dish with the onions for even more savory flavor. This is a great way to stretch the gravy and make the meal feel a little more substantial.
Prep-ahead tip: You can assemble the whole dish earlier in the day, cover it, and refrigerate it until dinnertime. If the dish is going into the oven cold from the fridge, add about 10 to 15 extra minutes to the baking time.
Don’t rush the bake: Cube steak needs that low, covered oven time to turn tender. If it still seems chewy when you check it, cover it back up and give it another 15 to 20 minutes.
Leftover plan: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave with an extra spoonful of broth or water to loosen the gravy back up.
