Ingredients
1 can (14 oz) sweetened condensed milk
1 1/2 cups sweetened shredded coconut
3 large eggs
1/2 stick butter, melted
Directions
1. Preheat the oven to 325°F. Set an empty glass pie plate on your work surface so you can mix everything directly in it.
2. Pour the sweetened condensed milk into the pie plate, then add the shredded coconut, eggs, and melted butter.
3. Stir well right in the pie plate until the mixture is evenly combined and there are no dry pockets of coconut left. Spread it out evenly all the way to the edges.
4. Bake for 30 to 35 minutes, until the top is golden and the center barely jiggles when the pie plate is gently moved.
5. Let the pie cool completely for about 1 hour before slicing. It will continue to firm up as it cools, making cleaner slices and a better custard texture.
Variations & Tips
Add vanilla: If you do not mind going beyond the four-ingredient version, stir in 1 teaspoon vanilla extract for a warmer bakery-style flavor that pairs really nicely with the coconut.
Use unsweetened coconut: For a less sweet pie, swap in unsweetened shredded coconut. The texture stays delicious, but the overall flavor is a little more balanced if you prefer desserts that are not quite as rich.
Do not overbake: The center should still have the slightest jiggle when it comes out of the oven. If it bakes until fully firm in the oven, it can turn rubbery after cooling.
