When you need a hearty, budget-friendly meal that can feed a crowd without a lot of fuss, this slow cooker cowboy casserole is the kind of recipe that earns a permanent spot in the dinner rotation. It uses just five simple ingredients, but they come together into a rich, comforting dish with tender potatoes, savory beef, sweet corn, and plenty of melted cheddar. It is especially handy for potlucks, busy school nights, and family gatherings when you want something filling that feels homemade and cozy.
This casserole is wonderful on its own, but I like to serve it with a crisp green salad, steamed green beans, or a simple fruit bowl to balance the creamy, hearty flavors. For a casual gathering, set it out with dinner rolls, pickle spears, and iced tea, and if you are feeding hungrier folks, a spoonful alongside baked beans makes it feel extra picnic-ready.
Slow Cooker 5-Ingredient Cowboy Casserole
Servings: 6 to 8
Ingredients
1 pound ground beef
3 medium russet potatoes, thinly sliced
1 can (15.25 ounces) whole kernel corn, drained
1 can (10.5 ounces) condensed cream of mushroom soup
2 cups shredded cheddar cheese
Directions
1. In a skillet over medium heat, brown the ground beef until fully cooked, breaking it into crumbles as it cooks. Drain off the grease well.
2. Lightly grease the slow cooker, then arrange the thinly sliced potatoes across the bottom in an even layer so they can cook down in the sauce.
3. Spread the browned ground beef over the potatoes, then scatter the drained corn evenly on top.
4. Spoon the condensed cream of mushroom soup over the top and gently spread it to cover as much of the surface as possible.
5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes are tender.
6. Sprinkle the shredded cheddar cheese over the top, cover again, and cook for about 15 minutes more, just until the cheese is melted. Serve warm.
Variations & Tips
For picky eaters: If your family prefers a smoother texture, stir the corn into the beef before layering so it is tucked more evenly throughout the casserole. You can also use a mild cheddar for a softer cheese flavor.
Potato slicing tip: Try to slice the russet potatoes thinly and evenly so they finish cooking at the same time. If the slices are too thick, they may stay a little firm, especially around the edges.
Make it extra cheesy: If you want a richer top, add an extra handful of cheddar during the last 15 minutes of cooking. That bubbly cheese layer is what makes this dish disappear fast at potlucks.
Slow cooker tip: Resist opening the lid during the main cooking time, since that lets out heat and can add extra time before the potatoes become tender.
