This is the kind of humble stove-top meal that turns a few inexpensive ingredients into something deeply comforting, with most of the flavor coming from patience rather than extra shopping. The onions need a long, gentle cook in butter until they become deeply browned and almost jammy, which is what gives the broth its rich, savory character. It is not a rushed recipe, and that honesty matters: plan on about 1 1/2 hours from start to finish, but for roughly $6 to $8, you get a full pot with the kind of aroma that makes the whole kitchen feel warm and lived-in.
Serve it hot with extra toasted bread if you like, even though the recipe keeps to just four main ingredients, and pair it with a crisp green salad, roasted vegetables, or a simple sandwich for a fuller meal. A light red wine, hard cider, or sparkling water with lemon all work nicely beside the rich broth and melted cheese.
4-Ingredient French Onion Soup
Servings: 6
Ingredients
4 large yellow onions, thinly sliced
1/2 cup butter
6 cups beef broth
6 slices provolone cheese
Directions
1. Slice the onions thinly. Add the butter to a large heavy pot or Dutch oven, then add the sliced onions. Set the pot over low heat.
2. Cook the onions slowly for 45 minutes to 1 hour, stirring every so often, until they turn deep brown, very soft, and jammy. Keep the heat low and resist rushing this step, since high heat can scorch the onions and make the flavor bitter.
3. Pour in the beef broth and stir well, scraping the bottom of the pot to loosen any browned bits. Raise the heat to medium and bring the soup to a gentle simmer. Cook for 20 to 30 minutes to blend the flavors.
4. Ladle the hot soup into oven-safe bowls or serving bowls. Lay a slice of provolone over each portion so the cheese covers most of the surface. Melt the cheese under a broiler if using oven-safe bowls, or cover the bowls briefly so the cheese softens and melts from the heat of the soup.
5. Serve right away while the cheese is fully melted and the soup is piping hot.
Variations & Tips
Use sweet onions: Sweet onions will give you a milder, softer flavor than standard yellow onions. The soup will still be good, but the final taste will be less robust and a little more delicate.
Cheese swap: Provolone melts beautifully, but Swiss, mozzarella, or Gruyère can be used if you want a more traditional baked-on top. If you change the cheese, keep the rest of the method the same and let the onions remain the star.
Broth matters: Since there are so few ingredients here, use a beef broth you genuinely like the taste of on its own. A richer broth gives the finished pot more body and helps support all that long-cooked onion flavor.
Patience is the technique: The most important tip is to keep the onions over low heat and give them the full 45 minutes to 1 hour they need. Proper browning is what makes this recipe work, and it cannot be hurried without changing the flavor.
