Some recipes earn their place on the table because they are fancy, and some earn it because they are dependable, easy, and so familiar folks start asking for them before the oven is even hot. This old-fashioned sweet potato side is one of those simple casserole dishes that has shown up at Midwestern holiday suppers and Sunday dinners for years, built from pantry staples and finished with that soft, toasted marshmallow top everybody sneaks a spoonful of first.
This dish is mighty good alongside roast turkey, baked ham, pork loin, or fried chicken, and it fits especially well on a Thanksgiving or Christmas table with green beans, dressing, cranberry sauce, and buttered rolls. Since it leans sweet and rich, I like to serve it with savory mains and a vegetable or salad that brings a little balance to the plate.
Oven Baked 4-Ingredient Sweet Potato Casserole with Mini Marshmallows
Servings: 8
Ingredients
2 cans (29 ounces each) cut sweet potatoes in syrup, drained very well
1 bag (10 ounces) mini marshmallows
1/2 cup brown sugar
1/4 cup butter, melted
Directions
1. Heat the oven to 350°F and lightly grease a glass baking dish. Drain the canned sweet potatoes very well so the casserole bakes up thick instead of watery.
2. Spread the drained sweet potatoes in the baking dish. Pour the melted butter over the top and sprinkle the brown sugar evenly over everything.
3. Bake for about 20 minutes, until the sweet potatoes are hot and the sugar and butter have settled into the dish.
4. Dump the whole bag of mini marshmallows evenly over the hot sweet potatoes, covering the top from edge to edge.
5. Return the dish to the oven and bake 8 to 10 minutes more, watching closely, until the marshmallows puff and turn lightly golden without scorching. Serve warm.
Variations & Tips
Drain Well: This is the biggest secret to a good texture. Let the canned sweet potatoes drain thoroughly so the butter and brown sugar make a thick, syrupy base instead of a thin one.
Keep the Chunks Intact: If you like a more rustic casserole, handle the sweet potatoes gently when spreading them in the dish so they stay in tender pieces instead of turning to mash.
Watch the Marshmallows Closely: Marshmallows can go from pale to too dark in a hurry. Start checking at the 8-minute mark and pull the dish as soon as the tops are puffed and lightly toasted.
Make It Ahead: You can assemble the sweet potatoes with the butter and brown sugar a few hours ahead and refrigerate. Bake the base first, then add the marshmallows just before the final bake so the topping stays nice and fluffy.
For a Smaller Crowd: The recipe can be halved and baked in a smaller dish if you do not need a full holiday-sized side.
