This oven baked 5-ingredient Mississippi pot roast is the kind of low-effort, high-reward dinner that fits perfectly into a busy week when you still want something hearty on the table. Everything goes right into the baking dish, and the long, slow oven time does the heavy lifting while the beef turns fork-tender. It’s a practical spin on the now-classic Mississippi-style roast, using pantry packets, butter, and a full jar of pepperoncini for that signature tangy richness.
Serve this roast with mashed potatoes, buttered egg noodles, or fluffy rice to soak up the savory juices. If you want a full comfort-food plate, add green beans, roasted carrots, or a simple side salad for some freshness. The shredded beef is also great piled onto toasted sandwich rolls with provolone for leftovers that do not feel like leftovers.
Oven Baked 5-Ingredient Mississippi Pot Roast
Servings: 6 to 8
Ingredients
1 beef chuck roast, about 3 pounds
1 jar (16 ounces) pepperoncini peppers, with some of the brine
1 packet dry ranch seasoning
1 packet au jus gravy mix
1/2 cup butter
Directions
1. Preheat the oven to 300 to 325°F. Place the chuck roast in a glass baking dish large enough to hold it comfortably.
2. Pour the pepperoncini peppers and a generous splash of their brine over the raw roast.
3. Sprinkle the ranch seasoning packet and the au jus gravy mix evenly over the top of the roast.
4. Set the butter on top of the roast, spacing it out so it can melt down over the meat as it bakes.
5. Cover the baking dish tightly with foil to trap in the moisture and help the roast braise in its own juices.
6. Bake for 3 1/2 to 4 hours, or until the beef is very tender and shreds easily with a fork. This is a long, slow bake, so give it the full time it needs.
7. Remove the dish from the oven carefully, uncover, and shred the beef right in the juices. Spoon some of the peppers and juices over the top before serving.
Variations & Tips
Make it milder: If you like the tang of pepperoncini but want a softer flavor, use a little less brine from the jar and add more peppers later to taste. You will still get that classic flavor without quite as much punch.
For easier serving: Let the roast rest in the baking dish for about 10 minutes before shredding. That short rest makes it a little easier to handle, and the meat stays nice and juicy.
Meal prep tip: This roast reheats beautifully, so it is a smart make-ahead dinner for busy workweeks. Store the shredded beef in its juices and reheat gently on the stove or in the microwave so it does not dry out.
Serving twist: Tuck the shredded beef into sandwich rolls, spoon on a few peppers, and add provolone or mozzarella for a cozy hot sandwich the next day. It is one of my favorite ways to stretch one roast into a second meal.
