This easy no-bake party bite is a smart choice when you want something sweet, polished, and low in carbs without turning on the oven. The filling comes together from just a few ingredients, but technique matters: softened full-fat block cream cheese whipped with powdered monk fruit sweetener turns silky, stable, and pleasantly cheesecake-like, while thoroughly dried berries help the filling hold its shape for serving.
Serve these on a chilled platter as part of a brunch spread, dessert board, or holiday appetizer table. They pair especially well with coffee, unsweetened iced tea, sparkling water with lemon, or a mixed platter of nuts and other fresh berries for a simple low-carb finish to a meal.
Low Carb 3-Ingredient Cheesecake Stuffed Strawberries
Servings: 18 to 24 stuffed strawberries
Ingredients
1 lb large strawberries
8 oz full-fat block cream cheese, softened
1/3 cup powdered monk fruit sweetener
Directions
1. Wash the strawberries, dry them very well, then hull the centers to create space for the filling. Slice a very thin sliver from the tip of each berry so it can stand upright on the tray without wobbling.
2. In a medium bowl, beat the softened cream cheese with the powdered monk fruit sweetener until completely smooth and fluffy. Make sure you use powdered sweetener rather than granulated so the filling pipes easily and does not taste gritty.
3. Spoon the filling into a zip-top bag and snip a small corner. Pipe the filling into each hollowed strawberry, creating a neat swirl on top.
4. Chill until ready to serve, ideally no more than a few hours ahead, since the strawberries will release moisture over time and the filling can soften. Serve cold.
Variations & Tips
Best texture: Let the cream cheese soften fully before beating. Cold cream cheese stays lumpy, while properly softened block cream cheese whips into a filling that pipes with clean definition.
Dry berries thoroughly: Any water left inside the berries will loosen the filling and make the tray messy. After washing and hulling, pat the strawberries dry inside and out with paper towels.
Make-ahead timing: These are best filled shortly before serving. You can wash, dry, trim, and hollow the strawberries ahead of time, and mix the filling in advance, but wait to pipe until the last few hours.
Easy garnish: If you want a slightly fancier look while keeping the ingredient list simple, add a tiny sprinkle of lemon zest or a few crushed freeze-dried strawberries right before serving.
