When you need a fast appetizer that feels fun and a little nostalgic, this bite-size oven snack is hard to beat. It uses just a few grocery-store staples, comes together in minutes, and delivers the familiar flavors of pizza in a crisp, savory two-bite form. The pepperoni acts as both the cup and the flavor base, while a restrained amount of sauce and cheese keeps everything neat enough for easy party serving.
Serve these warm on a platter with extra warmed pizza sauce for dipping, or pair them with a simple antipasto spread of olives, marinated vegetables, and crisp romaine salad. They also fit nicely alongside game-day favorites like wings, celery sticks, and sparkling water, light beer, or a dry red wine if you want something a little more grown-up.
Low Carb 3-Ingredient Pepperoni Pizza Cups
Servings: 24 cups
Ingredients
24 slices pepperoni
1 cup shredded mozzarella
1/4 cup no-sugar-added pizza sauce
Directions
1. Preheat the oven to 400°F. Lightly grease a 24-cup mini muffin tin if needed for easier release.
2. Press 1 slice of pepperoni into each mini muffin cup so it forms a small shell.
3. Spoon about 1/2 teaspoon of no-sugar-added pizza sauce into each pepperoni cup. Do not overfill, or the cups may leak as they bake.
4. Press a small mound of shredded mozzarella into each cup, gently compacting it so the filling stays in place.
5. Bake for 8 to 10 minutes, until the pepperoni edges curl and crisp and the cheese is melted and bubbling.
6. Lift the cups out right away and transfer them to a paper towel-lined plate to blot excess grease and keep the bottoms from turning soggy. Serve warm.
Variations & Tips
Keep the sauce light: The biggest trick here is restraint. A half teaspoon of sauce per cup is enough for flavor without making the pepperoni shells overflow or soften too much.
Cheese swap: Part-skim low-moisture mozzarella works especially well because it melts nicely without releasing too much liquid. If you want a sharper flavor, use a blend of mozzarella and a little provolone.
Add seasoning: Even with only three ingredients, you can add a pinch of dried oregano, Italian seasoning, or red pepper flakes over the cheese before baking for a more pizzeria-style finish.
Make them crispier: If your pepperoni is thick-cut, it may need the full 10 minutes. If it is thin, start checking at 8 minutes so the edges crisp without burning.
Serve and store: These are best hot from the oven, but leftovers can be refrigerated and reheated briefly in a toaster oven or air fryer to bring back some of the crisp texture.
