There is something mighty handy about a simple little make-ahead sweet that comes together with just a few pantry and refrigerator staples. Around my kitchen, these tiny chilled bites are the sort of treat I turn to when I need something quick for church suppers, card nights, or a family gathering, because they taste rich and special without a lick of baking. The trick is old-fashioned kitchen patience: let everything soften well, beat it smooth, and you will have a creamy mixture that pours neatly and sets up into a cool, satisfying party bite.
Serve these straight from the refrigerator on a chilled platter so they stay nice and firm. They are especially good alongside fresh berries for a little color, a hot cup of coffee after supper, or a tray of other small desserts for a holiday spread. If you are keeping things low carb, they fit in beautifully with a simple coffee service or a dessert board with toasted nuts and unsweetened whipped cream.
Low Carb 3-Ingredient Cheesecake Fat Bombs
Servings: 12 mini bites
Ingredients
8 oz cream cheese, softened
4 tbsp butter, softened
1/3 cup powdered sweetener
Directions
1. Set the cream cheese and butter out at room temperature until both are fully softened. This matters here, because the mixture will only pour properly if both are very soft and ready to beat smooth.
2. In a medium bowl, beat the softened cream cheese and butter together until completely smooth and fluffy, with no lumps remaining.
3. Add the powdered sweetener and beat again until the mixture is silky, creamy, and fully combined. Be sure to use powdered sweetener rather than granular so the finished bites stay smooth instead of gritty.
4. Arrange plain paper mini muffin liners on a tray or in a mini muffin pan. Pour or spoon the mixture into the liners, filling each about three-quarters full.
5. Chill the filled liners for at least 2 hours, or freeze for about 1 hour, until the bites are set firm. Keep them cold until serving, since they soften quickly at room temperature.
6. Serve cold on a chilled platter for the best texture.
Variations & Tips
Extra Smooth Texture: If your kitchen runs cool, cut the cream cheese and butter into pieces and let them sit longer before mixing. Any chill left in them can leave little lumps, and those are hard to beat out once the sweetener goes in.
Easy Filling Method: If pouring feels messy, transfer the mixture to a small spouted measuring cup or a piping bag with the tip snipped off. Either method makes it easier to fill the liners evenly to that three-quarters-full mark.
Make-Ahead Storage: These keep well in the refrigerator for several days in a covered container. For longer storage, freeze them and let them stand just a minute or two before serving, but do not leave them sitting out long.
Simple Flavor Twist: If you do not mind moving beyond the three-ingredient version, a splash of vanilla or a little lemon zest gives these a lovely old-fashioned dessert flavor. Just keep additions small so the mixture still sets up firmly.
