When I need an easy party appetizer that feels a little special without adding much to my prep list, this is the kind of recipe I come back to. It uses just a few ingredients, bakes in minutes, and gives you that warm, creamy center with a sweet-savory topping that makes everyone hover near the tray. It is especially handy during busy weeks when I want something low carb that still feels cozy and entertaining-worthy.
Serve it warm with cucumber rounds, celery sticks, pork rinds, or sliced mini bell peppers for a low carb spread that still feels generous. If you are putting together a snack board, add olives, salami, prosciutto, and a handful of berries so the rich cheese has plenty of fresh and salty pairings around it.
Low Carb 3-Ingredient Pecan Baked Brie
Servings: 6
Ingredients
1 wheel (8 ounces) brie
1/3 cup chopped pecans
2 tablespoons sugar-free maple syrup
Directions
1. Preheat the oven to 350°F and line a small baking tray or oven-safe dish with foil for easy cleanup.
2. Set the brie on the prepared tray and lightly score the top rind in a shallow crosshatch pattern, being careful not to cut too deep.
3. Spoon the chopped pecans over the top, then drizzle the sugar-free maple syrup over everything so it settles into the scored surface.
4. Bake for 10 to 15 minutes, until the sides feel soft when gently pressed and the cheese is warmed through. Do not overbake, or the rind may split and the cheese can spill out.
5. Let it rest for 5 minutes before serving so the center stays scoopable instead of turning too runny. Serve warm with cucumber rounds or pork rinds.
Variations & Tips
Add a pinch of spice: If you like a sweet-and-savory bite with a little warmth, add a tiny pinch of cayenne or black pepper to the pecans before spooning them over the top.
Use whole or roughly chopped pecans: Finely chopped pecans cling well to the syrup, but rougher pieces give the topping a little more crunch and texture. Either works, so use what you have on hand.
Do not cut too deeply: Light scoring helps the topping settle in, but deep cuts can make the rind split faster in the oven. A shallow pattern is plenty.
Make it board-friendly: For parties, place the warm brie in the center of a small snack board and surround it with cucumber slices, pork rinds, olives, and cured meats so guests can build low carb bites easily.
