Servings: 24 skewers
Ingredients
24 pitted green olives
24 slices hard salami
24 fresh mozzarella pearls
24 short appetizer skewers or toothpicks
Directions
1. Drain the mozzarella pearls and olives well, then pat both dry with paper towels so the skewers hold together neatly and the platter stays dry.
2. Fold each slice of salami into quarters so it looks full on the skewer and stays in place more easily.
3. Thread 1 olive, 1 folded salami slice, and 1 mozzarella pearl onto each short skewer or toothpick. Repeat until all ingredients are used.
4. Arrange the finished skewers on a white serving platter. Cover and refrigerate until ready to serve, especially if making them ahead. For the best texture, keep them chilled and serve within about an hour if they are sitting out in warm tailgate weather.
Variations & Tips
Try black olives: If you prefer a milder, darker olive flavor, swap the green olives for pitted black olives. The look is a little different but still classic and party friendly.
