Some recipes earn their place in the family box because they are fancy, and some earn it because they save the day when you need something sweet in a hurry. This is that kind of treat, the sort of pantry-staple dessert Midwestern home cooks have long relied on for church suppers, holiday trays, and those evenings when company is coming and there is not a minute to spare. With just a handful of ingredients and no oven to fuss with, it comes together with the kind of plain good sense that never goes out of style.
Serve these rich little squares with hot coffee, a cold glass of milk, or alongside a scoop of vanilla ice cream if you want to dress them up. They fit right in on a Christmas cookie tray, a potluck dessert table, or tucked into small paper liners for a shower or family reunion, since a little square goes a long way.
4-Ingredient Buckeye Bars
Servings: 16 bars
Ingredients
1 1/2 cups creamy peanut butter
1/2 cup butter, melted
2 1/2 cups powdered sugar
2 cups semi-sweet chocolate chips
Directions
1. Lightly grease or line an 8-inch square pan or small glass casserole dish with parchment paper so the bars will lift out easily later.
2. In a medium mixing bowl, stir together the creamy peanut butter, melted butter, and powdered sugar until a thick, smooth dough forms.
3. Press the peanut butter mixture evenly into the prepared pan, smoothing the top with the back of a spoon or a small spatula.
4. Melt the chocolate chips in the microwave in short bursts, stirring every 20 to 30 seconds, until smooth and glossy.
5. Pour the melted chocolate over the peanut butter layer and spread it into an even top coat from edge to edge.
6. Refrigerate for 1 to 2 hours, or until firm. Cut into squares and serve chilled or let them sit at room temperature for a few minutes before serving for a softer bite.
Variations & Tips
Use the right peanut butter: Regular creamy peanut butter gives the most reliable texture here. Natural peanut butter can separate and make the base too oily or too soft unless it is very well stirred.
Clean-cut squares: For neat slices, chill the bars until fully firm and use a sharp knife wiped clean between cuts. That old church-basement trick still works every time.
Chocolate finish: If your melted chocolate seems too thick to spread smoothly, let it sit a moment after melting and stir well. Spreading gently with an offset spatula helps keep the peanut butter layer nice and even underneath.
Small serving tip: These bars are rich, so cutting them into smaller bite-size pieces is a fine idea for party trays and holiday platters where folks like to sample a little of everything.
