There is something mighty comforting about a supper that asks very little of you and still turns out tender enough to make folks reach for a second helping. These slow cooker pork chops lean on a simple old-fashioned combination of cider vinegar, onions, and a little sweetness to gently braise the meat into that soft, pull-apart texture so many of us grew up loving. It is the kind of practical recipe that feels right at home in a Midwestern kitchen, where a few pantry staples and a dependable slow cooker can carry dinner all the way to the table.
Serve these tangy pork chops over mashed potatoes, buttered egg noodles, or plain white rice so none of that amber sauce goes to waste. A side of green beans, buttered corn, glazed carrots, or a crisp cabbage slaw makes a fine balance to the richness, and warm biscuits or a slice of sandwich bread are always welcome for sopping up the juices.
Slow Cooker 4-Ingredient Cider Vinegar Pork Chops
Servings: 4
Ingredients
4 thick bone-in pork chops
1 large onion, thinly sliced
1 cup apple cider vinegar
1/4 cup brown sugar
Directions
1. Scatter half of the sliced onion in the bottom of a slow cooker, then set the pork chops on top in an even layer.
2. Top the pork chops with the remaining onion, then sprinkle the brown sugar evenly over everything.
3. Pour the apple cider vinegar around and over the chops, cover, and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the pork is very tender.
4. Carefully spoon some of the cooking liquid over the chops before serving, making sure each portion gets plenty of softened onion and sauce.
Variations & Tips
Add a little seasoning: If your pantry is feeling generous, a pinch of black pepper, garlic powder, or dried thyme can be added without changing the spirit of the recipe. Even though the four main ingredients do the heavy lifting, a bit of seasoning gives the sauce extra depth.
Choose the right chops: Thick bone-in pork chops hold up best in the slow cooker and stay tender without turning stringy. Thin boneless chops can overcook quickly, so if those are what you have, check them sooner.
Make the sauce sweeter or sharper: If you like a stronger tang, reduce the brown sugar a touch. If your family prefers a gentler sweet-and-sour finish, add an extra tablespoon or two of brown sugar before cooking.
Thicken the juices: For a more gravy-like sauce, remove the cooked chops and whisk 1 tablespoon cornstarch with 1 tablespoon cold water, then stir it into the hot liquid in the slow cooker. Cover and cook on high for 10 to 15 minutes until slightly thickened.
Serve it country-style: These chops are especially good with mashed potatoes or buttered noodles because the sauce settles right into every nook and cranny. If you have leftovers, shred the pork and spoon it over toast, rice, or even a baked potato the next day.
