When I need an easy fall dessert that feels homemade without turning my whole kitchen upside down on a busy weeknight, this 3-ingredient oven baked gingerbread dessert is exactly the kind of shortcut I reach for. Using dry unmixed gingerbread powder as the base gives you all those cozy molasses-and-spice flavors with almost no prep, and baking it in a sheet pan keeps things simple, fast, and perfect for serving a family or bringing to a casual gathering.
This dessert is especially good served warm with a dollop of whipped topping or a scoop of vanilla ice cream so it can melt into all the spiced edges. If you want to round it out for a fall get-together, serve it with hot coffee, apple cider, or chai, and add a side of sliced apples or pears for a simple seasonal pairing.
3-Ingredient Oven Baked Gingerbread Dessert
Servings: 8
Ingredients
1 box dry unmixed gingerbread powder, about 14 to 15 ounces
1 can pumpkin puree, 15 ounces
1 cup water
Directions
1. Preheat your oven to 350°F and lightly grease an oven-safe metal sheet pan or line it with parchment for easier cleanup.
2. Pour the dry unmixed gingerbread powder into a large bowl, add the pumpkin puree and water, and stir until the batter is smooth and no dry pockets remain.
3. Spread the batter evenly into the prepared sheet pan, smoothing the top with a spatula so it bakes evenly.
4. Bake for 22 to 28 minutes, or until the center is set and a toothpick inserted in the middle comes out with just a few moist crumbs.
5. Let the dessert cool for at least 10 minutes, then slice into squares and serve warm or at room temperature.
Variations & Tips
Sweeter finish: If you want this to feel more like a holiday dessert, dust the top with powdered sugar after cooling or add a spoonful of whipped cream when serving.
Pan tip: A quarter sheet pan or similarly sized small rimmed baking pan works best here. If your pan is much larger, the batter will spread too thin and bake up dry, so use a smaller pan for a thicker, softer result.
Add texture: Chopped pecans or walnuts are great stirred into the batter if you do not need to keep it strictly 3 ingredients. They add a little crunch that pairs really well with the soft gingerbread crumb.
Make-ahead tip: You can bake this earlier in the day and leave it covered at room temperature for several hours. I like to warm individual squares for a few seconds before serving if I’m juggling dinner and dessert at the same time.
Flavor twist: For a deeper fall flavor, swap part of the water for brewed coffee or apple cider. It is a small change, but it makes the spice notes taste even cozier.
