Chilly Night Comfort: Just 5 simple components. I throw it together when I want a hot, filling supper handled long before the porch lights come on.

This 5-ingredient oven casserole leans into that retro, pantry-friendly comfort food style that feels right at home on a cold evening. It has the spirit of a mid-century hot dish: simple ingredients, minimal prep, and a baked finish that turns humble staples into something rich, savory, and deeply satisfying for a busy weeknight.

Serve this casserole with a crisp green salad, buttered green beans, or simple roasted carrots to balance its richness. If you want to stretch it a little further, warm dinner rolls or a scoop of mashed potatoes on the side make it feel especially hearty and supper-table ready.

Variations & Tips

Swap the protein: Ground turkey works well here if you want a lighter option, and it still bakes up nicely with the creamy sauce and crispy topping.

Add a vegetable: If I have a busy week and need to stretch dinner, I like stirring in a cup of frozen peas or green beans. It adds color and makes this feel a little more complete all in one dish.

Make-ahead tip: Assemble the casserole a few hours ahead, cover, and refrigerate. Wait to add the French-fried onions until just before baking so they stay crisp.

Cheese note: Sharp cheddar gives the best flavor, but a Colby Jack blend is a good fridge-cleanout substitute if that’s what you have on hand.

Texture tip: For an extra crispy top, broil the casserole for 1 to 2 minutes at the very end, watching closely so the onions do not burn.
