These low carb smoked salmon cucumber bites are the sort of little appetizer that looks dressed up for company but comes together with the kind of easy shortcut home cooks have always treasured. Cool cucumber, creamy herb cheese, and silky smoked salmon make a tidy three-ingredient bite that feels fresh and a little special, whether you are setting out a holiday tray, hosting a shower, or just wanting something light that does not ask you to turn on the oven.
Serve these bites alongside a simple relish tray, deviled eggs, or a bowl of mixed olives for an easy party spread. They also pair nicely with sparkling water with lemon, iced tea, or a crisp white wine if you are serving appetizers before supper. For brunch, I like them beside fresh berries or a little fruit salad to keep the table bright and colorful.
Low Carb 3-Ingredient Smoked Salmon Cucumber Bites
Servings: 8
Ingredients
1 large English cucumber, sliced into 24 rounds
8 ounces garden herb cream cheese, softened slightly
4 ounces smoked salmon, cut or torn into small ribbons
Directions
1. Wash and dry the cucumber well, then slice it into about 24 even rounds and arrange them in a single layer on a serving tray or platter.
2. Spread or pipe a small spoonful of the herb cream cheese onto each cucumber slice, making an even layer or soft little mound in the center.
3. Top each bite with a ribbon of smoked salmon, folding it gently so it sits nicely on the cream cheese.
4. Chill the platter for 10 to 15 minutes if you like, then serve cold.
Variations & Tips
Make-ahead tip: Slice the cucumber and portion the salmon ahead of time, but assemble the bites close to serving so the cucumbers stay crisp and the tops look fresh.
Neater presentation: If you want them to look a little fancier, spoon the cream cheese into a small plastic bag, snip the corner, and pipe it onto the cucumber rounds.
Mini brunch platter: Add a tiny sprinkle of black pepper or a few fresh dill fronds from the garden if you have them on hand. It keeps the spirit of the recipe while making the tray look extra pretty.
Using regular cucumbers: If you do not have an English cucumber, regular cucumbers work just fine. I like to peel them partially and pat the slices dry with a paper towel so the bites do not get watery.
