These little peanut butter cheesecake bites are the sort of no-fuss treat that fits right into a busy day when you want something sweet without turning on the oven. With just three simple ingredients and a piping bag, you get a creamy, rich bite that tastes like cheesecake filling with an old-fashioned peanut butter pie spirit to it. They are low carb, easy to make ahead, and just the kind of party tray sweet that folks reach for first and then come back looking for again.
Serve these chilled straight from the refrigerator on a cold tray, or tuck them into mini paper candy cups for a neater party plate. They pair nicely with fresh berries for a little color, a pot of hot coffee after supper, or a spread of other small low carb desserts if you are putting together a holiday or shower table. For a little contrast, a sprinkle of chopped peanuts or a few flakes of dark chocolate on the side can make them feel extra special.
Low Carb 3-Ingredient Peanut Butter Cheesecake Bites
Servings: 18 bites
Ingredients
8 ounces cream cheese, softened
1/2 cup creamy peanut butter
1/3 cup powdered low carb sweetener
Directions
1. In a medium mixing bowl, beat the softened cream cheese until smooth and fluffy with a hand mixer or sturdy spoon.
2. Add the peanut butter and powdered sweetener, then beat again until the mixture is fully combined, thick, and creamy with no streaks left.
3. Spoon the mixture into a piping bag or a zip-top bag with one corner snipped off.
4. Pipe the mixture onto a foil-lined tray in small swirled dollops, making about 18 bites.
5. Chill the bites for at least 1 hour, or until firm enough to lift easily from the tray. Serve cold.
Variations & Tips
Chocolate Drizzle: For a dressier tray, drizzle the chilled bites with a little melted sugar-free dark chocolate. Let the chocolate set before serving so the tops stay pretty and tidy.
Make-Ahead Tip: These keep well in the refrigerator for several days in a covered container. If you are stacking them, place a sheet of parchment paper between layers so the swirls do not get squashed.
Texture Tip: Be sure the cream cheese is properly softened before mixing, or the filling can turn lumpy. If your peanut butter is very stiff, stir it well first so it blends smoothly into the cream cheese.
Flavor Variation: A tiny splash of vanilla or a pinch of cinnamon is not necessary, but it can add a little bakery-style warmth if you do not mind stepping past the three-ingredient idea.
