When I need a dinner that can be assembled well before guests arrive, this 5-Ingredient Phantom's Delight Bake is the sort of practical casserole I reach for. It relies on a short list of pantry-friendly ingredients to create a savory, glossy bake with browned edges and plenty of rich juices, making it especially useful for busy evenings when the oven can do the heavy lifting while everything else gets handled.
Serve this bake with simple sides that can soak up the flavorful sauce, such as buttered rice, mashed potatoes, egg noodles, or thick slices of crusty bread. A crisp green salad or roasted green beans help balance the richness, and if you're setting out a casual spread for an evening gathering, it also fits nicely alongside a relish tray or a bowl of fruit.
5-Ingredient Phantom's Delight Bake
Servings: 6
Ingredients
2 pounds boneless skinless chicken thighs
1 packet dry onion soup mix
1 can (10 3/4 ounces) condensed cream of mushroom soup
1 cup sour cream
1 1/2 cups shredded cheddar cheese
Directions
1. Preheat the oven to 375°F and lightly grease a medium ceramic baking dish.
2. In a large bowl, stir together the condensed mushroom soup, sour cream, and dry onion soup mix until smooth and evenly combined.
3. Spread a small spoonful of the sauce mixture in the bottom of the baking dish, then arrange the chicken thighs in a single layer.
4. Spoon the remaining sauce over the chicken and spread it to coat the pieces well. Sprinkle the shredded cheddar evenly across the top.
5. Cover the dish with foil and bake for 35 minutes. Remove the foil and continue baking for 15 to 20 minutes more, until the chicken is cooked through and the top is browned and bubbling. Let rest for 5 to 10 minutes before serving.
Variations & Tips
Make-ahead tip: Assemble the entire dish up to a day in advance, cover, and refrigerate. When ready to bake, let it sit at room temperature for about 20 minutes so the dish warms slightly and bakes more evenly.
Cheese swap: Monterey Jack, mozzarella, or a mild Colby blend all melt well here. If you want a deeper browned top, use a little extra cheddar for sharper flavor and color.
Sauce adjustment: For a looser, more spoonable sauce, stir 1/4 to 1/2 cup milk into the mixture before assembling. This is especially helpful if you plan to serve the bake over rice or noodles.
Vegetable addition: A layer of sliced mushrooms or steamed broccoli can be tucked under or around the chicken to turn this into a more complete one-dish meal without changing the method much.
