Some of my favorite dinners are the ones that look almost too simple to work, especially on a busy weekday when I barely have time to think about dinner before lunchtime is over. This recipe is one of those wonderfully low-effort slow cooker meals where a few pantry and fridge staples do all the heavy lifting, turning an everyday cut of meat into something tender, savory, and full of tangy richness by dinnertime.
This is especially good served over mashed potatoes, buttered egg noodles, rice, or creamy polenta so you can soak up all the flavorful juices. If you want to round it out with something easy, add green beans, roasted carrots, a crisp salad, or simple steamed broccoli for a supper that feels complete without much extra work.
Slow Cooker 4-Ingredient Mississippi Pork Tenderloin
Servings: 6
Ingredients
1 whole pork tenderloin (about 1.5 lb)
1 stick butter
1 packet dry ranch seasoning
1 jar (12 oz) pepperoncini with juice
Directions
1. Place the whole pork tenderloin in the bottom of your slow cooker insert. Set the stick of butter directly on top of the pork, then sprinkle the ranch seasoning evenly over everything.
2. Pour the entire jar of pepperoncini, including the juice, around and over the pork tenderloin.
3. Cover and cook on low for 4 to 6 hours, or until the pork is very tender and cooked through. Pork tenderloin is leaner than roast, so start checking closer to the 4-hour mark to avoid overcooking.
4. Transfer the pork to a cutting board and slice or shred it into large pieces. Spoon some of the cooking juices over the top before serving.
Variations & Tips
Make it milder: If your family is sensitive to tangy or peppery flavors, use a little less of the pepperoncini juice and add extra peppers only at the end for serving. You will still get that signature flavor without making the dish too bold.
For cleaner slices: If you want neat medallions instead of shredded pieces, let the cooked pork rest for about 5 minutes before slicing. A sharp knife and a gentle hand help the tenderloin hold together better.
Turn it into sandwiches: Pile the sliced or shredded pork onto toasted sandwich rolls with provolone, or serve it on slider buns for an easy game-day or casual weekend dinner. The buttery juices are great drizzled right over the bread.
Meal prep tip: Store leftovers with some of the cooking liquid so the pork stays moist in the refrigerator. It reheats well for lunches, and the flavor is even better the next day over rice, potatoes, or noodles.
