There are some suppers that earn their place at the table because they are fancy, and then there are the honest, dependable casseroles that get a family fed well on a busy evening without any fuss. This kind of baked dish has deep roots in Midwestern home cooking, where a few pantry staples, a pound of beef, and something hearty from the freezer could be counted on to stretch into a warm meal. It is the sort of recipe I like to keep nearby when the day has run long and I still want to set out something bubbling and comforting from the oven.
Serve this casserole with a simple green salad, steamed green beans, or a plate of sliced tomatoes if you want a little freshness beside all that cozy richness. A spoonful of applesauce, dill pickles, or a side of buttered peas also fits right in with the supper-table feel of it, and if you are feeding a hungrier crowd, warm dinner rolls make a fine addition.
Oven Baked 5-Ingredient Cowboy Casserole
Servings: 6
Ingredients
1 pound ground beef
1 can (10.5 ounces) cream of mushroom soup
1 can (15 ounces) canned corn, drained
2 cups shredded cheddar cheese
1 bag (about 32 ounces) frozen tater tots
Directions
1. Preheat the oven to 375°F. Lightly grease a 9x13-inch glass casserole dish.
2. In a large skillet over medium heat, cook the ground beef until fully browned, breaking it up as it cooks. Drain off any excess grease.
3. Stir the cream of mushroom soup and drained corn into the browned beef until everything is evenly combined.
4. Spread the beef mixture evenly into the prepared casserole dish. Sprinkle the shredded cheddar cheese over the top.
5. Arrange the frozen tater tots in an even layer over the cheese, covering the top of the casserole.
6. Bake for 40 to 45 minutes, until the tater tots are golden and crisp and the casserole is hot and bubbly around the edges.
7. Let the casserole rest for 5 to 10 minutes before serving so it can set up a bit.
Variations & Tips
Make-ahead tip: You can brown the beef and mix it with the soup and corn a day ahead, then spread it in the dish, cover, and refrigerate. Add the cheese and frozen tater tots right before baking so the top stays crisp.
Extra-cheesy version: If your family likes a richer casserole, use 3 cups of cheddar instead of 2, putting a little cheese in the beef mixture and the rest under the tater tots for a gooier bite.
Crispier top tip: For a little more color and crunch, bake the casserole on the upper-middle oven rack and give it a few extra minutes at the end, watching closely so the tater tots turn deeply golden without overbaking.
Pantry swap: Cream of chicken soup can stand in for cream of mushroom if that is what you have on hand. The casserole will still bake up creamy and comforting.
Serving tip: Letting the casserole rest before scooping makes a real difference. It helps the creamy filling settle so each serving comes out neatly instead of running across the plate.
