When I need something dependable for a game day table, church social, or a last-minute visit from hungry folks, I reach for one of those old-fashioned combinations that proves simple can still feel special. Around the Midwest, creamy cold dips have long had a place beside cracker trays and pickle plates, and this one has that same thrifty, no-fuss spirit that makes people hover near the snack table and ask who made it.
Serve this with celery sticks, cucumber rounds, bell pepper strips, pork rinds, cheese crisps, or your favorite low carb crackers. It also fits right in on a tailgate spread with little smokies, deviled eggs, and a big tray of fresh vegetables, and it is mighty good tucked into lettuce cups if you want something a bit different.
Low Carb 3-Ingredient Million Dollar Dip
Servings: 8
Ingredients
8 slices bacon, cooked and crumbled
2 cups shredded sharp cheddar
1 cup mayonnaise
Directions
1. Cook the bacon until crisp if it is not already cooked, then let it cool and crumble it into small pieces.
2. In a medium mixing bowl, stir together the crumbled bacon, shredded sharp cheddar, and mayonnaise until fully combined.
3. Cover and chill for at least 30 minutes so the dip firms up and the flavors meld together.
4. Spoon onto a serving plate or into a small bowl and serve cold with low carb dippers.
Variations & Tips
Extra chill time: If you can make it an hour or two ahead, the texture gets thicker and the flavor settles in nicely, making it easier to scoop onto vegetable sticks or crackers.
Cheese tip: Sharp cheddar gives this dip its best bite, and freshly shredded cheese will usually blend more smoothly than pre-shredded bagged cheese.
Bacon balance: Save a small spoonful of bacon to scatter over the top right before serving if you want a prettier finish and a little extra crunch.
Make it your own: If your crowd likes a little more flavor, you can stir in a pinch of black pepper, a spoonful of chopped green onion, or a dash of garlic powder, though it is perfectly good just as it is.
